Mother’s Day Brunch
Ham & Swiss Puff Pastry Bundles
1 sheet puff pastry dough
1 tbsp olive oil
1 bunch asparagus, trimmed
4 slices ham
4 slices Swiss cheese
1 egg
1 tbsp water
Dust cutting board well with flour.
Roll out puff pastry and flour well on both sides to prevent dough from sticking.
Cut into four squares; approximately 3.5” by 3.5”.
Lightly coat asparagus in olive oil to prevent burning.
In the centre of each square, layer ham, Swiss and 3-4 asparagus spears.
Bring corners in and press to seal.
In a small bowl whisk egg with water to create eggwash.
Using a pastry brush, brush eggwash over exposed puff pastry.
Bake at 425°F for between 12-15 minutes or until pastry is golden brown.
Enjoy!
Sour Cream & Chive Scrambled Eggs
1 tbsp butter OR oil for cooking
3 eggs
2 tbsp sour cream
2 tsp chives, freshly chopped
salt and pepper
In a small bowl whisk eggs and sour cream until smooth.
In a large frying pan melt butter over medium high heat.
Pour in egg mixture and cook, stirring constantly, until scrambled eggs are set; between 2 and 3 minutes.
Season with salt, pepper and chives.
Serve immediately.
Enjoy!
Homemade Whipped Cream
1 cup whipping cream
2-3 tbsp icing sugar
½ tsp vanilla extract
Whisk ingredients until they create stiff peaks. Do not overmix.
Enjoy!

Love your recipes. They taste other world but are easy enough for anyone to try. You always make everything look good. This maybe my first comment but i have been watching you for years. You put a lot of work in your videos but your enthusiasm is really has been what keeps me coming back.

I will never get over the fact, that Americans call cream they whipped up 'homemade whipped cream'.
(When I hear that, I see a farm with actual cows, making the milk into cream first – simply beating it doesn't register as 'homemmade' for me – that's like calling a glass of water 'homemade water', because you poured it yourself and maybe even dropped an icecube in by hand… ^_~)
The dishes do look deliscious though and she's charming as ever in this. ^_^
