Beef Chilli:
Serves: 4

Cook time: 25 mins
Ingredients
1 tbsp olive oil
500g beef mince
Sea salt, to season
1 white onion, diced
1 red capsicum (bell pepper), diced
4 cloves garlic, chopped
230g jar Chipotle in adobo
400g can chopped tomatoes
1 tbsp soy sauce
1 tbsp smoked paprika
400g can black beans, rinsed and drained
1 cup (250ml water)
sliced spring onion, to garnish
Steamed rice and lime wedges, to serve
Method
Heat oil in a heavy based frying pan on medium-high heat.
Add mince, give a quick stir to spread around the pan, season with salt and then leave to brown for about 5 minutes.
Break up the beef with a wooden spoon, scraping all the fond from the base of the pan.
Add the onions, capsicum and garlic, cook for 2 minutes, stirring, until softened.
Stir in chipotle in adobo, tomatoes, soy and paprika. Add black beans and water, bring to a boil, then reduce heat and simmer for 10-15 minutes, until sauce reduces.
Serve chilli on steamed rice, garnished with spring onion and lime wedges.
Instead of water I use black bear (is that the English name for it?) and coffee. It’s awesome.

I live in America and I can't find capsicum. I only find freedom peppers. I don't think they're compatible. ☹️
i noticed you done alot of dinners with rice, asians been doing this and its great, you dont need to make a huge meal as the rice (like pasta etc) is most of your filler.
Add a little beef boullion and it makes it insanely good (little less salt as well)

Why drain off the bean water? Couldn't you just use a bit less salt, but keep the bean water for the extra body it'll provide, and the and added nutrients?
