We challenged chefs of three different skill levels – amateur Emily, home cook Rinku, and executive chef Ayesha Nurdjaja of Shuka Restaurant in New York City – to skewer us a batch of their favorite kebabs. Once each level of chef had finished and tasted their final product, we asked food scientist Rose to explain their choices from an expert’s perspective. Which kebabs are you sticking around for?

I would eat all three, but the salmon ones look the best. (With the first kind, I would possibly simplify the marinade, maybe just soy sauce and some crushed garlic)

Watching Emily work with a knife terrifies me. I would have no fingers left if I held the food the way she does. She's my absolute favorite cook here and I want her to keep all her fingers.

Kebab is a turkish dish, and there’s nothing called israel it’s called palestine
I notice a lot of seafood in aunty Rinku recipe, are these mostly southern India inspired dishes?
So, the only one that did Kebab was lvl 3.
Lvl 1 made awsal or shigaf.
And lvl 2 jest went rogue on us.
With that being said, I'd be delighted to try all of them.
I believe lvl 2 and lvl 3 chef's grow up eating kebabs, that's their recipe looks more authentic. And Emily's recipe more for the steak.
Good kebabs 🍢 usually have good seasoning and spices
