Ingredients for Chilli Chicken Recipe:

Boneless Chicken, (preferably thigh) cut into 1 inch pieces – 500 gms

For marination:
– Crushed Pepper – 3/4 tsp
– Salt- 3/4 tsp
– Cornflour- 3 tbsp
– All purpose flour (Maida)- 2 tbsp
– Soy sauce- 1 tsp
– Ginger garlic paste- 1 tsp
– Egg – 1
– Oil- 1 tsp

Sauces & Spice Powder :
– Dark Soy sauce- 1 tbsp
– Green Chilli sauce- 2 tbsp
– White Vinegar- 1.5 tsp
– Crushed Pepper- pinch or 1/4 tsp
– Salt- pinch

Other Ingredients:
– Garlic, chopped- 3 tsp
– Ginger chopped- 2 tsp
– Spring onion, white portion chopped- 3 tbsp
– Green chillies, thin slices- 3-4 nos
– Onion thick slices- 2 small onion ( 100 gms)
– Green capsicum thick slices- 1 medium ( 80 gms)
– Cornflour slurry- 1 tbsp cornflour mixed in 2 tbsp of water
– Spring onions, green tops- chopped for garnishing 3-4 tbsp
– Oil- 2 tbsp
– Salt for seasoning

Preparation:

– Wash and cut the boneless chicken into 1 inch pieces.
– Marinate with the items indicated. Mix well and set aside for 30 mins.
– Chop the garlic, ginger and spring onions, thick slice the onions & capsicum (green pepper) and thin slice the green chillies.
– Deep fry the chicken pieces in a kadhai till golden in colour. ( total 4-5 mins)Remove and set aside

Process:

– Heat oil in a pan or skillet for deep frying. Drop the battered chicken pieces side by side in hot oil to not overcrowd the pan. Do not stir for 1 min.
– Fry these in hot oil on medium heat till light brown. This should take around 4-5 mins. Repeat for the next batch.
– Take a small wok or kadhai & heat 2 tbsp oil.
– Add the chopped garlic and ginger, stir for 30 seconds and add the white chopped spring onions.
– Stir it for 30 secs & add the diced onions & green chillies. Fry on medium heat for 1-2 mins and then add the capsicum slices.
– Add a pinch of salt and pepper each.
– Sauté on medium heat for around 2 mins or less till they are still crisp.
– Add the fried chicken pieces and fry 1 min on medium heat.
– Now add all the sauces and mix well. Stir fry for 1 min on high heat.
– Add the cornflour slurry and mix well again. Add little water if required.
– Stir fry for 1 min & garnish with chopped spring onion greens.
– Mix and stir for 1 min on high heat and serve hot.

    What temp oil for the deep frying? Only asking cos 4-5 mins seems quite a long time for smallish pieces of thigh.
