AFGHANI CHICKEN
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Marination
1 kg Chicken (thigh/drumstick) चिकन
½ cup Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण

For Paste
½ cup Coriander leaves, धनिया पत्ता
2-3 Green chillies, हरी मिर्च
1 inch Ginger, peeled, slice, अदरक
6-8 Garlic cloves, लहसुन
2 large White onions, roughly slice, सफेद प्याज
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Oil, तेल

For Curd Mixture
Prepared Paste,तैयार किया हुआ पेस्ट
1 ½ cup Curd, beaten, दही
¼ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
½ tsp Cumin powder, जीरा पाउडर
¼ tsp Garam masala (optional), गरम मसाला
½ tsp Dry fenugreek leaves, crushed, कसूरी मेथी

For Roasting Chicken
2 tbsp Ghee, घी

For Gravy
2-3 tbsp Ghee, घी
2 Bay leaf, तेज पत्ता
1 inch Cinnamon stick, दालचीनी
2 Green cardamom, हरी इलायची
Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण
Roasted Chicken, भुना हुआ चिकन
2 cup Water,पानी

For Garnish
Coriander sprig, धनिया पत्ता
Ginger, julienned,अदरक

Process
For Paste
In a bowl, add coriander leaves, green chili, ginger, garlic, white onions, salt to taste and oil.
Transfer it into a grinder jar and grind into a smooth paste and keep it aside for further use.

For Curd Mixture
In a large mixing bowl, add curd and prepared paste.
Now, add turmeric powder, coriander powder, cumin powder, garam masala and fenugreek leaves and mix it well.

For Marination
Firstly make slits on both sides of chicken drumsticks and thighs using a sharp knife. The slits should not be too deep.
Now, add half a quantity of prepared curd mixture and mix it well.
Let it marinate for 25-30 minutes.

For Roasting Chicken
Heat a pan on medium heat. When the pan becomes hot enough, add chicken pieces one by one. Add ghee.
Roast the pieces well from one side till golden brown and flip them one by one and fry from the other side as well.

For Gravy
In a deep pot, add ghee, once it gets hot add bayleaf, cinnamon stick, green cardamom and let it splutter well.
Now, add prepared curd mixture.
Let the gravy cook on medium heat for about 7-8 minutes while stirring occasionally.
Now, add roasted chicken and water.
Let the chicken cook in the gravy on medium heat for about 10 minutes.
Transfer it into a serving dish, garnish it with coriander sprig, ginger julienne and serve hot with roti.

  11. I alwyas try your recipe in this case pyaaj paka hi nhi eventually i had to re cook in my way by cooking onion first and then rest of the stuff. Not so perfect recipe
