  3. You don’t need to boil it. Just baste it in vinegar and overnight in the fridge.
    Though I think that boiling it for a few seconds might slightly reduce the nasty pork smell, who knows

  7. Not a professional chef, but it looks a bit different from what I'm used to, the skin needs to explode, this one looks very flat. Last time I've eaten something visually similar to yours was quite chewy and not crispy. I'd suggest watching Made with Lau's version of this dish, as the steps are a bit different than yours
