Improving my basic pancakes

***REVISED RECIPE, MAKES A HALF DOZEN***

1 tablespoon butter, plus more for the pan
1 tablespoon sugar
1 egg
1-2 teaspoons vanilla
1 cup milk (or maybe more)
1 tablespoon cornstarch
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups all-purpose flour (or maybe less)

Melt the butter, then mix in the sugar to cool it down. Stir in the egg until smooth, then the vanilla and the milk — enough milk to get you 1 1/2 cups total liquid. Stir in the starch, salt, baking soda, baking powder and flour — enough flour to get the thickness you want (see video). Mix until the batter is almost but not entirely smooth (see video). Rest the batter at least 15 minutes before you cook.

Heat a nonstick pan until butter browns but not very rapidly. Smear the pan with butter, then use a towel to smear a little batter all over the pan to create a thin film — wipe off until almost clean. (This will get you more even color on your first batch of pancakes.) No additional butter is needed if you’re cooking on teflon. Cook the pancakes until you see bubbles and the bottom has solidified and browned, then flip and finish the other side.

1. In a pan add chopped green chilli garlic, one chopped onion and saute well.
2. Add 1 chopped tomato along with 1 tbsp red mirch powder, half tbsp salt and cook for 2 minutes.
3. Add chopped capsicum and 1 tbsp tomato ketchup, 1 tbsp pizza pasta sauce and 1 tbsp mayonnaise.
4. Mix it well and add paneer cubes and garnish with green coriander.
5. Take a burger bun and add mayonnaise and ketchup and put the stuffed in between burger buns.
6. Roast for both the sides and enjoy.
7. Your delicious paneer burger is ready.

Creamy Potato Dal – Save Recipe Below 👇

This is one of the first meals I started cooking regularly when I left home (Canberra) to move to Sydney back in 1999. I used to make a big batch on Sunday then reheat it to have with a pitta bread for lunch. Whenever it’s cold or gloomy it’s one of my go to comfort foods 🥰

Nutrition – 4 x 500kcal (20P, 77C, 12F) + 11g fibre

Ingredients – 4 serves (huge)

15ml olive oil
1 tbsp cumin seeds
1 large onion
3 cloves of garlic
I tbsp grated ginger
2 tbsp curry powder
1 tin of tomatoes
800g potato flesh
700g chicken stock
200g red lentils
400ml reduced fat coconut milk
Coriander
3 limes
Salt and pepper

Method :

1. Heat the oil in a sturdy pot

2. Add the cumin seeds, then onion, then garlic and ginger. Cook gently until everything is soft and smells great.

3. Add the curry powder then mix in the tin of tomatoes to form your base (I forgot the tomatoes)

4. Add the potatoes, then chicken stick and lentil. Bring to the boil then reduce the heat and allow to simmer for 30 minutes (make sure to give it the odd stir)

5. When the potatoes soften mash the mixture till all the big chunks of potato fall apart.

6. Finish by adding in the coconut milk, coriander and lime juice

This is a bloody big pot of soup. I’ve made it up to four serves of 500 calories to compare the satiety data, but it easily makes 6-8 serves. Particularly with a pitta or some toast. I personally add a bunch of black pepper and a splash of olive oil at the end.

I adore this meal. It’s happiness in a bowl for me. I’m going to buy some really good bread and have it for lunch again tomorrow 😎

Ingredients
3 corn cobs, peeled, husk removed
1 red onion, chopped
1 clove garlic, smashed
2 eggs
¼ cup (60ml) coconut milk
3 spring onions, finely sliced
sea salt and black pepper, to season
1 cup (150g) self-raising flour
2 tsp Tajin seasoning
1 avocado
juice of 1 lime
2 tomatoes, finely diced
½ white onion, finely diced
1 jalapeno chilli, finely diced
half a bunch coriander, leaves chopped
2 tbsp olive oil
poached eggs, to serve
Method
Slice kernels off corn cobs and place half in a small food processor. Add onion and garlic and pulse until a paste forms.
Transfer mixture to a medium bowl along with remaining corn kernels. Stir in eggs, milk and spring onions, season with salt and black pepper.
Fold in flour and seasoning, until just combined. Set batter aside.
Mash avocado with half the lime juice, until smooth. Season with salt.
For pico de gallo, combine tomatoes, white onion, jalapeno and coriander in a small bowl with the remaining lime juice and mix well.
Heat some of the oil in a large frying pan over medium heat.
Working in batches, drop ¼ cupfuls of batter into the pan and allow to spread to about 8cm wide. Cook for 3 minutes on each side, or until golden brown.
Transfer to a plate lined with a paper towel and keep warm while repeating with remaining batter and oil.
To serve, place 3 fritters on each serving plate, top with avocado puree and scatter over pico de gallo. Serve with poached eggs.

Framing A Fireplace For Our New House

I’m going to frame the fireplace for our new house right here.
First, I marked all the measurements on the floor, this fireplace is 2 feet deep and 7 feet wide.
My wife ordered a modern linear gas fireplace.
We wanted it up off the floor, so I built a 6” box platform for the unit to sit on.
Then, I built the two side walls- these are 14 feet tall.
I used a laser to transfer the marks from the floor up to the trusses above. This way I knew exactly where to put the walls so they would be plumb.
I put a piece of ½” OSB at the top for fire blocking and then added another in the middle later on.
Next, I framed in the firebox opening with jacks on the right and left side and a header on top.
I added two more jacks and another header above this to create a recessed area for a TV.
Finally, I installed studs at 16” on center above these openings for drywall.
About this time the New Guy came back from his break and started barking orders at me.
I had totally forgot I needed to put a piece of ¾” plywood behind the TV recess.
This will give us something to mount the TV to without getting in the way of the fireplace vent pipe.
