Ingredients:
-Olper’s Milk powder ½ Cup
-Maida (All-purpose flour) 1 tbs
-Baking powder ½ tsp
-Ghee (Clarified butter) 1 tbs
-Anda (Egg) whisked 3-4 tbs
-Doodh (Milk) 1 litre
-Sugar ½ Cup or to taste
-Zafran (Saffron strands) ½ tsp dissolved in 2 tbs of milk
-Kewra essence ½ tsp
-Elaichi ke danay (Cardamom seeds) crushed ½ tsp
-Pista (Pistachios) sliced 1 tbs
-Badam (Almonds) sliced 1 tbs
-Badam (Almonds) sliced
-Pista (Pistachios) sliced
Directions:
-In a bowl,add milk powder,all-purpose flour,baking powder & mix well.
-Add clarified butter,gradullay add whisked egg (add 3 tbs & mix well,add 1 more tbs if required),mix well & gather the dough (don’t over mix).
-With the help of greases hands,take small quantity of mixture (5g) make smooth balls with no cracks (makes 30).
-In a wok,add milk,bring it to boil & cook on low flame for 8-10 minutes.
-Add sugar,dissolved saffron,kewra essence,cardamom seeds,mix well & cook on low flame for 2-3 minutes.
-In boiling milk,add prepared balls & cook on very low flame until they float on the surface & increase in size (don’t stir),cover & cook on low flame for 10 minutes.
-Turn off the flame,add pistachios & almonds.
-Let it cool completely.
-Garnish with almonds,pistachios & serve!

-Greased hands ki madad sa thoda sa mixture (5g) le kar bilkul smooth aur crack-free balls banaayein (makes 30).
-Karahi mein doodh dal ker ubal lein aur halki ancch per 8-10 minutes kliya paka lein.
-Cheeni,dissolved zafran,kewra essence aur elaichi ke danay dal kar mix karein aur halki ancch per 2-3 minutes kliya paka lein.
-Boiling doodh mein tayyar balls dal dein aur bohat halki ancch per pakayein yahan tak ka surface par float kernay lagein (don’t stir) aur dhak ker halki ancch per 10 minutes kliya paka lein.
-Chulha bund ker dein,pista aur badam dal dein.
-Thanda ker lein.
-Badam aur pista sa garnish ker ka serve karein!

-Hari mirch (Green chillies) 7-8
-Aloo bukhara (Dried plums) 7-8
-Hara dhania (Fresh coriander) chopped handful
-Himalayan pink salt ½ tsp or to taste
-Chawal (Rice) sella 600g (soaked for 1 hour)
Directions:
-In a pressure cooker,add clarified butter & let it melt.
-Add onion & fry on medium flame until golden.
-Add tomatoes,mix well & cook for 2-3 minutes.
-Add beef,ginger garlic & mix well until it changes color.
-Add pink salt,red chilli crushed,coriander seeds & garam masala powder,mix well & cook on medium flame for 4-5 minutes.
-Add bone marrow,mix well & cook for 8-10 minutes.
-Add water & mix well,bring it to boil,cover,seal properly & cook on medium flame until beef is tender (25-30 minutes).
-Add water,green chillies,dried plums,fresh coriander & mix well.
-Add pink salt & mix well,add rice & mix,bring it to boil & cook on medium flame until water is reduced (4-5 minutes).
-Cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.
-Serve with salad & raita!

-Pink salr,lal mirch crushed,sabut dhania aur garam masala powder dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Beef nalli dal ker ache tarhan mix karein aur 8-10 minutes kiya paka lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak ker properly seal ker lein aur darmiyani ancch per beef gul janay tak paka lein (25-30 minutes).
-Pani,hari mirchien,aloo Bukhara aur hara dhania dal ker ache tarhan mix ker lein.
-Pink salt dal ker mix karein,chawal dal ker mix karein aur ubal anay ka bad darmiyani ancch per pani sukh janay tak paka lein (4-5 minutes).
-Kitchen cloth & lid sa cover ker lein aur halki ancch per 10-12 minutes kliya steam cook ker lein.
-Salad & raita ka saath serve karein!
Potato Buns
Makes: 8
Prep time: 30 mins + 2 hours approx rising time
Cook time: 40 mins
Ingredients
2 brushed potatoes (Sebago, Dutch cream, Russet, Maris Piper), peeled, chopped
1 cup (250ml) buttermilk, warmed
7g packet (2½ tsp) dried yeast
¼ cup (55g) caster sugar
80g unsalted butter, diced, at room temperature
2 eggs
3⅓ cups (500g) bread flour
1 tsp salt
Method
Place the potatoes in a saucepan of salted water. Bring to a boil over medium-high heat, cook for 12-15 minutes until fork tender.
Drain potatoes and let them steam in the colander for a couple of minutes to remove excess water.
Mash the potatoes in a medium bowl using a hand masher or potato ricer and set aside 1 cup worth.
Mix the milk, yeast and 1 tbsp of the sugar in the bowl of a stand mixer and let sit for 10 minutes, until it becomes foamy.
Add remaining sugar, butter, 1 egg, half the flour, warm mashed potato and salt and fit the dough hook attachment.
Mix on low speed until a shaggy dough forms, then add the remaining flour. Increase the speed to medium, and mix for 5 minutes, until the dough is pulling away cleanly from the sides of the bowl.
Place dough in a lightly oiled bowl, cover with plastic wrap and let rise in a warm, draft free place for 1-1½ hours until doubled in size.
Punch dough down and transfer to a lightly floured bench, divide into 8 equal pieces.
Shape each piece into a tight ball and place on a large oven tray lined with baking paper, 5cm apart from each other.
Cover loosely again with a clean tea towel or oiled cling wrap and place in a warm place until risen again about 50% (approximately 30 minutes).
Preheat oven to 190°C fan forced (375°F).
Whisk remaining egg and brush tops of rolls lightly.
Bake for 15-18 minutes, or until light golden. Cool on the tray for 15 minutes, before transferring to a wire to cool completely before slicing and using for your favourite sandwich.
