Here’s another idea to try with rice paper–boba! It’s soo soft and chewy and really does taste pretty close to the real thing.

Making the boba balls is really easy–just dip the rice paper in cool water and shake off the excess. You don’t want it to be soaked, or else it’ll fall apart. I know a lot of people use warm, or even hot, water to soften rice paper, but cool water is best because it’s easier to work with. Just wait and it’ll soften in about 20 seconds. Fold up the bottom third of each rice paper sheet, then fold in the sides and roll it up. Then, cut it into little balls and spread apart so they will dry and be easier to cook later.

Make the brown sugar syrup by heating ¼ cup brown sugar and ½ cup water together in a small pan over high heat until mostly reduced. Add the rice paper boba and cook for about 5 minutes, until the mixture reaches a syrup-like consistency. Then, add to your choice of tea and/or milk–I like a warm drink because the rice paper boba will harden if the drink is too cold.
