Mutton Biryani
Preparation time 10-15 minutes
Cooking time 40-45 minutes
Serve 2-4

Ingredients
For Mutton Marination
1kg Mutton (with bones) मटन
225 gm Curd, beaten, दही
100 gm Fried onions, तले हुए प्याज
25 gm Salt, नमक
75 gm Ginger Garlic paste, अदरक लहसुन का पेस्ट
2-3 tbsp Fried onion oil, तले हुए प्याज का तेल
3 no. Green chilies (less spicy & slit into half) हरी मिर्च
1 Green chili (spicy & slit into half) हरी मिर्च
15 gm Degi red chili powder, देगी लाल मिर्च पाउडर
15 gm Coriander powder, धनिया पाउडर
3 gm Caraway seeds, शाही जीरा
2-3 tbsp Tender Coriander stems, roughly chopped, धनिया के डंठल
10 gm fresh Mint leaves, पुदीना पत्ता

For Biryani Masala
10 gm Coriander seeds, धनिया की बीज
5 gm Cumin seeds, जीरा
15 gm Black peppercorns, काली मिर्च के दाने
2 gm Mace, जावित्री
2 gm Green cardamom, हरी इलायची
1 gm Black cardamom, बड़ी इलायची
1 gm Cloves, लौंग
1gm Cinnamon stick, दालचीनी
4-5 pc Bay leaf, तेजपत्ता
Salt to taste, नमक स्वादअनुसार

For Cooking Mutton
2-3 tbsp Fried onion oil, तले हुए प्याज का तेल
1 tbsp Ghee, घी
½ inch Cinnamon stick, दालचीनी
1-2 Mace, जावित्री
2 Green cardamom, हरी इलायची
2 Black cardamom, बड़ी इलायची
3 Cloves, लौंग
2 Bay leaf, तेजपत्ता
Marinated mutton, मैरिनेटेड मटन
1 ½ tsp Prepared Biryani Masala, तैयार किया हुआ बिरयानी मसाला

For Jhol
2 Green chilies, (less spicy & slit into half) हरी मिर्च
1 Green chili, (spicy & slit into half) हरी मिर्च
2 tbsp fresh Mint leaves, पुदीना पत्ता
1 tsp Prepared Biryani Masala, तैयार किया हुआ बिरयानी मसाला
¼ cup Fried onion, तले हुए प्याज
2 tbsp Coriander leaves, धनिया पत्ता
¼ cup Excess oil, तेल
2-3 tbsp Fresh cream, ताजा क्रीम
Salt to taste, नमक स्वादअनुसार
1 ½ tsp Kewra water, केवड़ा जल

For Cooking Rice
Water, पानी
Salt to taste, नमक स्वादअनुसार
1 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
2 Black cardamom, बड़ी इलायची
2 Green cardamom, हरी इलायची
1 kg Sella basmati rice, (soaked for 30 minutes) सेला बासमती चावल

For Layering
Prepared Cooked Mutton, पका हुआ मटन
1st batch of Cooked rice, पके हुए चावल
Prepared jhol, तैयार किया हुआ मिश्रण
1 tsp Prepared Biryani Masala, तैयार किया हुआ बिरयानी मसाला
2nd batch of Cooked rice, पके हुए चावल
Prepared jhol, तैयार किया हुआ मिश्रण
1 tsp Prepared biryani masala, तैयार किया हुआ बिरयानी मसाला
fresh Mint leaves, पुदीना पत्ता
few Fried onions, तले हुए प्याज
Coriander leaves, धनिया पत्ता
2-3 tbsp Saffron water, केसर का पानी
2-3 Green chilies (spicy & slit into half) हरी मिर्च

Eid Ki Seviyan (Sheer Khurma)
Prep time – 10 mins
Cooking time – 15 mins
Serves – 4

Ingredients:
Almonds, chopped (बादाम) – 1½ tbsp
Dates (खजूर) – 5-7 nos
Pista, chopped (पिस्ता) – 2 tbsp
Walnut, chopped (अखरोट) – 2 tbsp
Chironji (चिरौंजी) – 1 tbsp
Milk, full fat (दूध) – 1 lt
Sugar (चीनी) – ½ cup
Cardamom powder (ईलाइची)- ½ tsp
Desi Ghee (घी) – 2 tbsp
Semiyan (wheat vermicelli) (सेमियाँ) – 40 gms/ 1 cup (fistful)
Saffron, optional (केसर) – a pinch

Method:
Eid ki seviyan or Sheer Khurma is a dessert which is prepared during Ramadan. But, it’s too tasty that you should make this at any point of the year!

For Eid ki Seviyan, in a hot pan, add ghee and melt it; desserts are always prepared in desi ghee, then add the chopped almonds, pistachios, walnuts, and some sliced dates. You can even use dried dates(chuvare) instead of dates. Roast them on low flame till golden brown.

Now, add milk. Add sugar and cardamom powder to it. We have to reduce the milk while making Sheer Khurma, and that’s what makes it different from Kheer. You can see it turning a little brown as the dates are releasing their colour.

We have to roast the seviyan and for that, in a hot pan, add some ghee and melt it. Break the seviyan into half, roast them in ghee on low flame till golden brown.

Reduce the milk to 30% to 40% of the actual amount. Now add the roasted seviyan. Stir it gently and give it a quick boil. The seviyan will absorb the milk and it’ll be perfect. You can add some strands of saffron too.

Eid ki seviyan or Sheer Khurma is ready to served. Enjoy!

18 large basil leaves, julienned
2 tablespoons chopped fresh curly parsley
2 teaspoons chopped fresh thyme leaves
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
3/4 pound dried capellini or angel hair pasta
1 1/2 cups freshly grated Parmesan cheese
Extra chopped basil and grated Parmesan, for serving

Directions

Bring a large pot of water to a boil and add 2 tablespoons of salt and a splash of oil to the pot.

Meanwhile, heat the 1/2 cup of olive oil in a large (12-inch) saute pan. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, 2 teaspoons salt, the pepper, and red pepper flakes. Reduce the heat to medium-low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to soften but don’t break up.

While the tomatoes are cooking, add the capellini to the pot of boiling water and cook for 2 minutes, or according to the directions on the package. Drain the pasta, reserving some of the pasta water.

Place the pasta in a large serving bowl, add the tomatoes and Parmesan and toss well. Add some of the pasta water if the pasta seems too dry. Serve large bowls of pasta with extra basil sprinkled on top and a big bowl of extra Parmesan on the side.

Delicious and Healthy Banana Bread

Healthy Gluten/Sugar/Dairy Free Banana Bread

1 ½ cups of almond flour ( can be found at Whole Foods or most other health food stores or you can make your own almond flour. Google for more directions:) )
½ cup of coconut flour ( can be found at Whole Foods or most other health food stores or you can make your own coconut flour, google for more directions )
1 ½ teaspoon baking soda
½ of sea salt
4 tablespoons of olive oil
6 eggs
4 ripe bananas ( the riper the bananas, the sweeter your banana bread will be)
1 cup of chopped walnuts

Directions

1. Preheat your oven to 350 F /175 C

2. Mix all dry ingredients together with a spoon

3. Mix all wet ingredients with a fork until nice and smooth.

4. Pour the wet ingredients into the dry ingredients

5. Mix the dry and wet ingredients well until smooth.

6. Add chopped walnuts and mix well.

7. Pour the mixture into a bread baking pan lined with a parchment paper brushed with olive oil.

8. Bake for 50 minutes or until the top is browned.

P.S. My Bread Pan is 9.25 x 5.25x 2.75 in

Home Garden Tour in Tamil | Steffi's Garden 2023 | Steffi Ulagam

In this video join me in the tour of my home garden. We have couple of plants and trees that we collected over the years and some of them have started fruiting. It’s a wonderful feeling to see the plants recover from the frosted winter and put on new flowers and leaves and form fruits. I try to plant as many vegetables and fruits in the space available and I find gardening very relaxing and refreshing.
If possible, please grow some plants at home and share the love of gardening!
