*RECIPE*
1. In a pan saute chopped garlic and green chilli.
2. Add sliced onion, capsicum and cabbage.
3. Saute it well.
4. Add 1 tbsp soya sauce, 1 tbsp red chilli sauce and 1 tbsp green chilli sauce.
5. Mix it well and cook for 2 minutes.
6. Take laccha paratha, add the stuffing, tomato ketchup, green chutney, onions and chaat masala.
7. Roll it well and enjoy.

Weeknight Bolognese

Ingredients
2 tablespoons good olive oil, plus extra to cook the pasta
1 pound lean ground sirloin
4 teaspoons minced garlic (4 cloves)
1 tablespoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 1/4 cups dry red wine, divided
1 (28-ounce) can crushed tomatoes, preferably San Marzano
2 tablespoons tomato paste
Kosher salt and freshly ground black pepper
3/4 pound dried pasta, such as orecchiette or small shells
1/4 teaspoon ground nutmeg
1/4 cup chopped fresh basil leaves, lightly packed
1/4 cup heavy cream
1/2 cup freshly grated Parmesan cheese, plus extra for serving
Directions
Heat 2 tablespoons of olive oil in a large (12-inch) skillet over medium-high heat. Add the ground sirloin and cook, crumbling the meat with a wooden spoon, for 5 to 7 minutes, until the meat has lost its pink color and has started to brown. Stir in the garlic, oregano, and red pepper flakes and cook for 1 more minute. Pour 1 cup of the wine into the skillet and stir to scrape up any browned bits. Add the tomatoes, tomato paste, 1 tablespoon salt, and 1 1/2 teaspoons pepper, stirring until combined. Bring to a boil, lower the heat, and simmer for 10 minutes.
Meanwhile, bring a large pot of water to a boil, add a tablespoon of salt, a splash of oil, and the pasta, and cook according to the directions on the box.
While the pasta cooks, finish the sauce. Add the nutmeg, basil, cream, and the remaining 1/4 cup wine to the sauce and simmer for 8 to 10 minutes, stirring occasionally until thickened. When the pasta is cooked, drain and pour into a large serving bowl. Add the sauce and 1/2 cup Parmesan and toss well. Serve hot with Parmesan on the side.

If you love having coffee in your desserts, then this eggless, no oven Coffee Creme Caramel is a must try 🤌🏻 Made using only 4 ingredients, this delight is going to be a constant in your dessert list, my word 🥳🫶🏻
Ingredients
💛For the caramel (makes 2 ramekins)
💛2 tbsp sugar
💛2 tsp water
For the pudding
💛1 + 1/4 cup milk
💛2 tbsp sugar
💛1 tbsp coffee powder
💛2 tbsp custard powder
Method-
1. Add 1 tbsp sugar and 1 tsp water each in 2 microwave safe ramekins and microwave this for 2 mins in 30 second bursts until the sugar caramelises.
2. Now In a bowl add milk, coffee, sugar, custard powder and give it a good whisk.
3. Microwave this for 4 minutes, mixing well after every minute until the mixture thickens.
4. Transfer this in the caramelised sugar ramekin and refrigerate for 3-4 hours or until the pudding sets completely.
5. Carefully demould the pudding once set and serve chilled .

Serves: 4
Prep time: 5 min
Cook time: 15 min
Ingredients
1 tbsp olive oil
600g beef (or lamb) mince
1 red onion, chopped
2 tomatoes, chopped
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1 tsp garlic powder
1 tsp garam masala
pinch dried chilli flakes
1 cup frozen peas
½ cup (125ml) water
steamed rice, chopped coriander leaves, to garnish
Method
Heat oil in a large saucepan on high heat. Add beef, cook, without stirring for 2 minutes.
Add onion, stir to combine and start to break up the mince with the back of a wooden spoon. Cook until mince is well browned.
Add tomatoes and garlic, cook for 2 minutes.
Stir in spices, reduce heat to medium, cover and cook for 3-4 minutes.
Stir in peas and water, cover, then cook for a further 2 minutes.
Serve mince on a bed of steamed rice, garnished with coriander.

Chicken Noodle Soup

Yield: 6 servings
Ingredients
1 whole (2 split) chicken breast, bone in, skin on
Olive oil
Kosher salt
Freshly ground black pepper
2 quarts homemade Chicken Stock (see recipe)
1 cup medium-diced celery (2 stalks)
1 cup medium-diced carrots (3 carrots)
2 cups wide egg noodles
1/4 cup chopped fresh parsley
Chicken Stock:
3 5-pound roasting chickens
3 large yellow onions, unpeeled, quartered
6 carrots, unpeeled, halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled, cut in half (optional)
20 sprigs fresh parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled, cut in half crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns
Directions
Preheat the oven to 350 degrees.
Place the chicken breast on a sheet pan and rub the skin with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until cooked through. When cool enough to handle, remove the meat from the bones, discard the skin, and shred or dice the chicken meat.
Bring the chicken stock to a simmer in a large pot and add the celery, carrots, and noodles. Simmer uncovered for about 10 minutes, until the noodles are cooked. Add the cooked chicken meat and parsley and heat through.
Season to taste and serve.
Chicken Stock:
Yield: 6 quarts
Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, and seasonings in a 16- to 20-quart stockpot. Add 7 quarts of water and bring to a boil. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander and discard the solids. Chill the stock overnight. The next day, remove the surface fat. Use immediately or pack in containers and freeze for up to 3 months.
