Sliders

Yield: 4 to 5 servings

Ingredients

2 pounds premium ground beef (80 percent lean and 20 percent fat)
1 tablespoon good Dijon mustard
3 tablespoons good olive oil, plus extra for brushing the grill
1 teaspoon chopped thyme leaves
3 teaspoons chopped garlic
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 ounces grated Gruyere
12 small Brioche buns
4 ounces baby arugula
3 medium tomatoes, sliced in 1/8-inch-thick rounds
2 small red onions, sliced in 1/8-inch-thick rounds
Ketchup, for serving

Directions

Build a charcoal fire or heat a gas grill.

Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.

When the grill is medium-hot, brush the grill grate with oil to keep the sliders from sticking. Place the sliders on the grill and cook for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done. For the last 2 minutes of cooking time, place 1/2-ounce Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.

Slice the buns in half crosswise and toast the halves cut side down on the grill.

Divide the baby arugula among the 12 bottom buns, top each with a slider, and finish with a slice of tomato and red onion. Cover with the top of the bun and serve hot with ketchup.

SUMMARY:
– If your eye starts to twitch occasionally, it’s a signal that you’re dealing with stress or having a hard time trying to get good sleep.
– We’re all familiar with uncontrollable chattering teeth and shivering legs when we’re cold. This happens because all your muscles are slightly, yet rapidly, moving to generate some heat from friction.
– The way you sat restricted the amount of blood that could get to your leg. Only ten minutes without proper blood circulation will cause this numbness, and the uncomfortable feeling afterwards is the sensation of blood rushing back in to every bit of your leg.
– To compensate for the lack of protection, and wash away all the dust that might settle on your eye during the night, special glands in the corners of our eyes produce tears.
– Yawning is basically stretching your jaw, and inhaling as deep as you can. Both actions make the blood in your vessels rush to your head, and spinal fluid go down your spine.
– Floaters aren’t exactly objects; they’re just tiny imperfections in one special part of the main body of an eye, called the vitreous. We can see them because these structural imperfections stand in the way of the light that passes from pupil to retina, which forms your vision.
– The worst kind of waking up is when you jerk or jump, startled, with the terrible sensation that you fell off your bed, or a cliff. It turns out this happens right after you’ve fallen asleep, at the exact moment all your muscles simultaneously relax. Your brain may mistake it as a distress call, because normally if all your muscles relaxed, you’d fall.
– The wrinkling happens when small blood vessels constrict under the skin; but that’s not the most interesting part. Scientists discovered that if the nerves in your fingers are damaged, the wrinkles won’t appear at all, no matter how long they’ve been under water.
– The clicking and cracking sounds happen when a serious force pushes on a joint, bending it in a way that causes a small bubble of gas to escape, and deflate.
– When your stomach is empty, your brain sends a signal to start the process of digesting something and transporting it further down the digestive system. But there’s nothing to move except gas, which is what makes all the noise.

Ingredients

1 ½ (22 ml) Tbsp honey
5 tsp (25 g) baking soda
½ tsp (2 g) cream of tartar
1 cup (250 ml) water
3 ½ cups (700 g) granulated sugar
1 ½ cups (375 ml) golden corn syrup

Directions

1. Grease and line a 9-x-13-inch (23-x-33 cm) pan with parchment paper so that the paper comes up higher than the sides.

2. Have the honey measured in one dish and stir the baking soda and cream of tartar together in another dish. Have these on hand, along with a sieve, by the stove before you start cooking the sugar.

3. In a large* saucepan, place the water (water first allows the sugar to dissolve evenly), sugar and corn syrup and bring the mixture to a boil over high heat, stirring just once or twice to ensure everything is dissolving evenly. Continue boiling, without stirring, until the mixture reaches 284ºF (140ºC) on a candy thermometer. At this point, stir in the honey, and continue boiling until 300ºF (150ºC) is reached (the liquid will only be a pale amber colour, not caramelized fully). Remove the pot from the heat and using a wooden spoon quickly sift in the baking soda mixture, stirring quickly and vigorously to make sure it has been incorporated, but once the baking soda is no longer visible, stop stirring so as not to deflate the toffee. Quickly scrape the frothing mass (it will keep growing and growing!) into the prepared pan and let it set (do not spread it) until cool – this can take up to 2 hours, and it will continue to grow a little more before it sets.

4. Crack the toffee with a rolling pin to break into bite-sized pieces.

5. The toffee will keep up to 4 weeks in an airtight container.

6. *You need a large saucepan to factor in room for the sponge toffee to expand.

3 TYPES PAKODA
Preparation time 10-15 minutes
Cooking time 15-20 minutes
Serve 2-4

Ingredients
For Green Chilli Garlic Paste
3 no. Green chilies (less spicy & chopped)
6-7 no. Garlic cloves, chopped, लहसुन
2 tbsp Tender Coriander stems, chopped

For Vada Pav Filling
2 tsp Oil, तेल
1 tsp small Mustard seeds, बारीक राई
2 sprig Curry leaves, करी पत्ते
Prepared Green Chilli Garlic paste
½ tsp Turmeric powder
2 no. Potatoes (boiled & mashed)
Little water
1 tbsp Coriander leaves, chopped

For Bhajiya
2 medium Onion, sliced
1 medium Potato, sliced
2 tbsp Coriander leaves, chopped
Salt to taste
A pinch of asafoetida
½ tsp Degi red chili powder
1 tsp Turmeric powder
½ cup Jackfruit (peeled & chopped)
½ cup Tata sampann Gram flour, टाटा संपन्न बेसन
¼ tsp Carom seeds
½ tsp Turmeric powder
A pinch of Asafoetida
1 tsp Degi red chili powder
Prepared Masala, roughly crushed

For Palak Patta Pakoda
1 cup Chana dal (soaked & paste)
A pinch of asafoetida
½ tsp Degi red chili powder
¼ tsp Turmeric powder
A pinch of Garam masala
Salt to taste
½ tbsp Coriander leaves, chopped
1 small bunch Spinach

For Assembling Bread Pakoda
5-6 no. Bread Slices, ब्रेड स्लाइस
Green chutney, हरी चटनी
3 no. Cheese slice, चीज
Prepared Pakoda filling, तैयार किया हुआ पकौड़े का मिश्रण
Paneer, grated, पनीर
Nylon sev, नायलॉन सेव

For Batter
2 cups Tata sampann Gram flour, टाटा संपन्न बेसन
¼ tsp Carom seeds, अजवाइन
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of asafoetida, हिंग
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Prepared Masala, roughly crushed, तैयार किया हुआ मसाला
⅓ cup Water, पानी
Salt to taste, नमक स्वादअनुसार

For Masala
2 tsp Coriander seeds, धनिये के बीज
½ tsp Fennel seeds, सौंफ
1 tsp Cumin seeds, जीरा

Oil for frying, तेल तलने के लिए

Process
For Garlic Green Chili Paste
In a mortar pestle, add garlic, green chili, coriander stems, salt to taste and make a coarse paste.
Keep it aside for further use.

For Vada Pav Filling
In a kadai or shallow pan, heat oil, add mustard seeds and let it splutter.
Add curry leaves, prepared garlic green chili paste and saute it for a minute.
Add turmeric powder, add boiled potatoes and mash it well together.
Add splash of water, remove it in a tray, add coriander leaves, keep it aside for further use.

For Bhajiya
In a parat, add onions, potatoes, coriander leaves, salt to taste, asafoetida, degi red chili powder, turmeric powder and mix it well.
Add jackfruit and leave it aside for losses of its moisture.
Add tata sampann gram flour, carom seeds, asafoetida, turmeric powder, degi red chili powder, prepared masala and make a smooth batter..
Shape it into patties, place it into a hot oil and fry till half cooked.
Cut the fried patties into four parts and refry them once again till golden brown color into it.
Serve on a serving plate.
Serve hot with green chutney.

For Palak Patta Pakoda
In a bowl, add chana dal paste, asafoetida, degi red chili powder, turmeric powder, garam masala, salt to taste, coriander leaves, prepared masala and mix it well.
In a spinach leaf, add prepared filling, cover it with another spinach leaf like sandwich and keep it aside for further use.
Dip palak patta into prepared batter and add one by one palak patta into hot oil and fry till half cooked, remove it in a absorbent paper.
Refry the palak patta till golden brown color on it.
Serve on a serving plate.
Serve hot with green chutney.

For Bread Pakoda
Take bread slices, apply green chutney on all bread slices, add cheese slice, prepared vada pav filling, paneer, nylon sev and cover it with another bread slice.
Dip into the prepared batter and add one by one into hot oil, and fry till half cooked, remove it in a absorbent paper.
Refry the bread pakodas till golden brown color on it.
Serve on a serving plate.
Serve hot with green chutney.

For Batter
In a bowl, add tata sampann gram flour, carom seeds, turmeric powder, asafoetida, degi red chili powder, prepared masala, water, salt to taste and make it lumps free batter.
Add water gradually and make a smooth batter into it, keep it aside for further use.

For Masala
In a mortar pestle, add coriander leaves, fennel seeds, cumin seeds and make it coarse powder.
Keep it aside for further use

Ingredients

2 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups hot milk
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Pinch nutmeg
12 ounces Gruyere, grated (5 cups)
1/2 cup freshly grated Parmesan
16 slices white sandwich bread, crusts removed
Dijon mustard
8 ounces baked Virginia ham, sliced but not paper thin

Directions

Preheat the oven to 400 degrees F.

Melt the butter over low heat in a small saucepan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter?flour mixture and cook, whisking constantly, until the sauce is thickened. Off the heat add the salt, pepper, nutmeg, 1/2 cup grated Gruyere, and the Parmesan and set aside.

To toast the bread, place the slices on 2 baking sheets and bake for 5 minutes. Turn each slice and bake for another 2 minutes, until toasted.

Lightly brush half the toasted breads with mustard, add a slice of ham to each, and sprinkle with half the remaining Gruyere. Top with another piece of toasted bread. Slather the tops with the cheese sauce, sprinkle with the remaining Gruyere, and bake the sandwiches for 5 minutes. Turn on the broiler and broil for 3 to 5 minutes, or until the topping is bubbly and lightly browned. Serve hot.

JALEBI RECIPE:
Preparation Time: 25 mins
Cooking Time: 30mins
Serves: 4

Ingredients
For Sugar Syrup
1 Cup Sugar
¾ Cup Water
½ lemon juice
½ tsp Saffron Strands

For Khameer Jalebi (Fermented version)
1 Cup Refined Flour
½ tsp yeast
2 tsp gram flour
3/4 cup water (approx till it thickens to dropping consistency )

For Instant Jalebi
1 Cup Refined Flour
¼ Cup Yogurt
1 tsp Vinegar
½ tsp Baking Powder
Other Ingredients
Water if needed to thin it down
Ghee or Oil, for deep frying

Process:-
For Sugar Syrup
● Add sugar and water in a pot, heat on medium flame.
● When the sugar melts, add lemon juice and keep stirring till one string consistency is
achieved.
● Now add in saffron and mix well. Turn off the flame and set aside till in use.
For Khameer Jalebi
● Mix refined flour, yeast, gram flour & water in a bowl. Set aside for 6-7 hours to ferment.
● Once the batter ferments, beat it once again and mix.
● While mixing the ingredients, the batter will remain thicker than the usual batters as the
starch will break down while fermenting and the batter will get thin.
For Instant Jalebi –
● In a mixing bowl combine refined flour, baking powder, vinegar, yogurt and mix well. Set
aside for 5-7 minutes.
● Add ½ cup water and whisk till there are no lumps.
● Now whisk for 2 mins so the air incorporates.

For Making Jalebis-
● Fill the prepared batter in piping bag or ketchup bottle.
● Heat oil for deep frying in a wide mouth pan.
● Form round whirls working closely from outside to the centre.
● Fry the jalebis till golden in colour. Remove the jalebi and immediately steep in prepared
sugar syrup.
● Soak the jalebis for 3-4mins. Remove and arrange on a plate.
● Repeat till all the batter is used up. Serve hot.

Get the color back in your favorite shirt or fabric by following these steps.

Step 1: Read directions
Read the directions on the fabric dye box. But on rubber gloves, if you’re using them, and mix the dye and set it aside.

Step 2: Fill a large bucket
Fill a large bucket with hot water.

Tip
The bucket should be big enough for the fabric to move around.

Step 3: Soak the fabric
Soak the fabric in hot water for five minutes and then remove it with the tongs.

Step 4: Add to dye
Place the fabric in the dye and stir it constantly for 20 to 30 minutes.

Step 5: Rinse
Rinse the fabric in warm water and then cool water, until the water runs clear.

Step 6: Wash fabric
Wash the fabric in warm water with mild detergent and then put it in the dryer.

Step 7: Clean containers
Once you’re finished, clean the buckets with bleach to remove the dye.
