Strawberry Cake recipe

Ingredients
2 boxes any store bought white cake mix
- ingredients vary based on your mix, follow the back of the box
2-3 cans rainbow chip frosting

1/2c Rainbow sprinkles

1.5 lbs Rolled fondant
Red and green gel color

Chocolate covered sunflower seeds

Materials
9×13″ cake pan
Football shaped cake pan

Stand mixer or a whisk and elbow grease
Cake board covered with a sheet of wax paper
Fondant cutter or pizza cutter
Rolling pin

Thin and thick paintbrushes

Pre-heat oven to 350 degrees

Following the instructions, mix up 2 boxes of White Cake Mix.
Coat rainbow sprinkles in flour and fold in to batter.
Butter and flour cake pans and split batter evenly between the two and bake for 30 minutes (the football pan could take longer so keep an eye on it).

Stack the cakes by placing a thin layer of icing on a cake board, then lay the 9×13″ cake down. Apply a layer of icing atop the cake in a football formation, then lay down the football cake. Press down on your layers to make sure theyʼre settled. Cut out the strawberry shape by cutting off the one end of the football and trimming the bottom layer. Completely coat the cake with a healthy layer of frosting.

Start by kneading fondant to make easier to work with and separate about 1/4 of the package (eyeball it) to color green for the leaves and the rest color red for the berry. Once the desired color is achieved, roll out fondant and drape over the cake. Smooth fondant and press into the sides of the cake and trim off any excess with a fondant cutter. Brush a little water to the leaves and adhere them to the top of the berry, then brush the entire cake with water to give a nice polished look.

Make indentions with the blunt end of a small paintbrush and apply the sunflower seeds.

Tres Leches Cake with Bay Leaf Milks and Raspberry Sauce

Ingredients
– 250g (8.8 oz) plain flour (all-purpose flour)
– 1 tsp baking powder
– ½ tsp salt
– 5 large eggs
– 250g (8.8 oz) sugar
– 120ml (4 fl oz) milk
– 2 tsp vanilla extract
– butter for greasing
– 1 can sweetened condensed milk
– 1 can evaporated milk
– 150ml (5.3 fl oz) milk
– 3 bay leaves
– 500ml (17.6 fl oz) whipping cream
– 2 tbsp icing sugar
– 500g (17.6 oz) raspberries
– 50g (1.8 oz) sugar
– 1 cinnamon stick

Method
1. Preheat the oven to 180°C (350°F).
2. In a bowl, combine the flour, baking powder, and salt. Set aside.
3. Weigh out the sugar and set it aside. Separate the eggs into yolks and whites. Whisk the egg whites, gradually adding half the sugar, until you form a meringue. In a separate bowl, whisk the egg yolks with the remaining sugar until they become pale yellow.
4. Add the 120ml of milk and vanilla extract to the yolks and whisk until combined.
5. Grease a baking dish with butter and set it aside.
6. Add the milk and egg yolk mixture to the flour mixture and mix just until there are no large dry spots. Then gently fold in the egg whites, being careful not to overmix the batter.
7. Pour the batter into the greased baking dish and spread it to the edges. Bake in the preheated oven for 30 minutes.
8. Remove the cake from the oven and place it on a wire rack to cool.
9. While the cake is cooling, add all three milks (condensed milk, evaporated milk, and the 150ml of regular milk) to a pot with the bay leaves. Heat on low to infuse for 20 minutes, then remove from heat and allow to cool.
10. In a separate pot, add the raspberries, 50g sugar, and the cinnamon stick. Cook over medium heat for 6-7 minutes, stirring often. Then pass the mixture through a sieve to remove the seeds and set the sauce aside to cool.
11. Once the cake has cooled (it doesn’t need to be completely cold), flip it over in the tray. Using a fork, poke holes all over the cake, then pour the cooled milk mixture over it.
12. Whip the cream with the icing sugar until you have a thick whipped cream. Spread it evenly over the cake, then place the cake in the fridge for 2-3 hours to allow the cream to set.
13. To serve, slice the cake and plate it, then drizzle some of the raspberry sauce over each piece.

And today, some whales still have remnants of what used to be a bone for a hind leg in their skeleton (it just doesn’t show outside the skin). SUMMARY:
– Pakicetus was a 4-footed land mammal and is known as the “first whale.” It was about the size of a wolf and was a carnivore. These mammals lived on land by shallow waters known as the Tethys Sea.
– Some scientists believe that Pakicetus was a land dweller who was forced to swim in the ocean due to lack of food on land or warm temperatures. As they spent more and more time in the water, the animal evolved into a creature that lived in the sea.
– One of the first evolved animals to come from Pakicetus was a species known as Ambulocetus. It lived near estuaries somewhere between 50 to 48 million years ago.
– Over a period of about 37 million years, Pakicetus gradually evolved into over 80 different species of whales. That’s why 27.5 million years ago, one of the first whales was significantly smaller than they are today.
– Whales definitely didn’t start out as the titans of the sea they are today as their smaller size made them easy prey for predators like hungry sharks.
– To say whales were well fed at this time was an understatement! Whales everywhere filled their tummies with scrumptious krill, and they grew larger and larger.
– Whales are consistently the biggest animal on our planet these days. The blue whale, for example, weighs more than a Boeing 757 — passengers and bags of peanuts not included. And their belly buttons are the size of a dinner plate!
– While science has proven that whales have evolved from Pakicetus, they have another possible relative that still lives on Earth with us today: hippos!
– Many scientists believe that whales have hit their capacity for growth once they measure 109 ft. That’s because at 110 ft, a whale can’t physically close their mouth within 10 seconds before its prey escapes. If it took any longer, they wouldn’t be able to eat, which would lead to their death.

Ingredients
– 220g (7.8 oz) buckwheat flour
– pinch of salt
– 1 egg
– 620ml (21 fl oz) cold water
– 20g (0.7 oz) melted butter (plus more for cooking)
– boiled potatoes for serving
– crispy bacon for serving
– double cream brie for serving
– sautéed brown onions for serving

Method
1. Add the buckwheat flour to a bowl with a big pinch of salt.
2. Add the egg and cold water, and whisk until you have a smooth batter.
3. Add the melted butter and give it one final whisk.
4. Prepare all your filling ingredients: potatoes, bacon, cheese, and onions.
5. Heat a non-stick pan over medium heat and brush with some melted butter. Pour enough batter to cover the bottom of the pan and cook for one and a half minutes until you just start to see bubbles form.
6. Add the fillings to the centre, then fold each side towards the middle.
7. Garnish with some optional chervil and serve.

Ingredients
– 1kg (2.2 lbs) fries (recipe on my website)
– 500g (1.1 lbs) cooked sirloin steak, diced
– special sauce (recipe below)
– 200g (7 oz) grated mozzarella cheese
– 2 tomatoes, seeds removed and diced
– 200g (7 oz) tin sliced jalapenos
– 3 spring onions, sliced

Method
1. Cook your steaks and let them rest well.
2. Prepare the spring onions, cheese, tomatoes, jalapenos, and special sauce.
3. Fry the chips until crispy.
4. In a large serving dish or tray, start with a layer using half of each ingredient: fries, steak, special sauce, cheese, tomatoes, jalapenos, and spring onions.
5. Repeat with the remaining ingredients, finishing with the green parts of the spring onions.

Special Sauce

Ingredients
– 1 large brown onion, diced
– 120g (4.2 oz) tomato sauce (ketchup)
– 90g (3.2 oz) mayonnaise
– 40g (1.4 oz) yellow mustard
– 40g (1.4 oz) gherkin relish

Method
1. Caramelise the diced onions in a medium hot pan with a drizzle of olive oil and a pinch salt until they are golden, soft and sweet, then set aside to cool.
2. Once the onions have cooled, add them to a bowl with the rest of the ingredients. Mix well until thoroughly combined.

INGREDIENTS
• 2 cups old-fashioned oats

• 1/3 cup hemp hearts

• 1/3 cup coconut sugar or brown sugar

• 1 tsp baking powder
• 2 tsp cinnamon
• ¼ tsp salt
• 2 cups almond milk
• 1 large egg
• 1 tsp vanilla
• 3 TBSP melted refined coconut oil

• 2 mashed bananas

DIRECTIONS
1. Preheat oven to 350ºF and butter or line a muffin tin ( or 9 inch baking dish).
2. Mix oats, sugar, baking powder, cinnamon and salt in a medium bowl.
3. In another bowl, whisk together the almond milk, egg, vanilla, coconut oil and banana.
4. Add oat mixture to wet ingredients and stir to combine.
5. Pour into baking dish and bake for about 25 minutes. Top with maple syrup and enjoy!

Note: this recipe can be made ahead by preparing oatmeal the night before, storing in fridge and baking in the morning. Baked oatmeal also reheats very well!
