Fried Blooming Onion Recipe:
🧅 Ingredients:
1 large onion
½ cup all-purpose flour
¼ cup corn flour
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp pepper powder
½ tsp salt
1 tsp oregano
½ cup water
1 packet of potato chips (crushed)
As needed, oil for deep frying
Ice water for soaking

🍳 Instructions (Short & Simple):

1. Cut the onion into a flower shape, keeping the root intact.

2. Soak in ice-cold water for 30 minutes to let it bloom.

3. In a bowl, mix all dry ingredients with water to make a thick batter.

4. Dip the soaked onion into the batter, making sure it’s fully coated.

5. Roll the onion in crushed Bingo chips for a crispy outer layer.

6. Deep fry in hot oil until golden brown and crispy.

7. Serve hot with your favourite dipping sauce!

Thai Pomelo Salad (Yam Sam O)

Thai Pomelo Salad (Yam Sam O) inspired my Samila Gaeng in the sunshine coast.

Serves: 4
Prep time: 15 mins
Cook time: 5 mins

Ingredients
1 pomelo
2 tsp peanut oil
2 shallots, finely sliced
¼ cup dried shrimp
1 lemongrass, white part only, finely shredded
2 kaffir lime leaves, finely shredded
¼ cup peanuts, toasted, chopped
⅓ cup shredded coconut, toasted
½ cup mint leaves
1 long red chilli, finely sliced
DRESSING
3 dried birdseye chillies
1 tbsp palm sugar, grated
2 tbsp lime juice
3 tsp fish sauce

Method
Remove rind and pith from pomelo and segment. Break up into small pieces and transfer to a large bowl.
Heat oil in a medium frying pan over medium heat. Cook shallots for 5 minutes, stirring, until softened and starting to brown. Set aside to cool.
Dry fry the shrimp in a small frying pan on medium high, until fragrant. Transfer to a spice grinder and blend or pound in a mortar and pestle.
For the dressing, dry fry the chillies in a small frying pan over medium heat until starting to colour. Transfer to a spice grinder and grind to a powder. Measure out ¼-½ tsp of powder (depending on your spice heat preference) then reserve the rest for another use.
Pound the palm sugar in a mortar and pestle with the lime juice, until dissolved, then stir in fish sauce and the chilli powder.
Pour dressing over pomelo, then add shallots, shrimp powder, lemongrass, lime leaves, peanuts, coconut, mint and chilli.
Toss until well combined, then serve immediately.

The first thing I did was cut a bunch of short studs.
The lip on the tub sits 16 inches off the floor, so I want my finished deck to be 15 inches tall that way I’ll have room for durock, thinset, and tile.
I built walls out of 2×4, 2×6, and even 2×10 so that all four sides of the tub will be fully supported by framing.
I secured everything with T-25 deck screws- this way there will be no movement or squeaks.
I made sure the framing was plumb and square as I went.
Next, I snapped a line and attached a ledger to the wall. Then I installed one of the 2 x 4 walls I had built further in from the ledger.
Finally , I covered the framing with rim board left over from our floor system.
I fastened it down with 2 inch ring shank nails, making sure to overlap all the spices in the walls.
This inch and an eighth thick rum board was definitely overkill, but it was a great way to use up some leftover material.
Now I just need to decide- do I hire my professional tile guy to install the tile around the deck or save money by using the new guy?

This is one of the weird cheesecakes I eat each afternoon when I’m losing weight. They squash my hunger so I don’t overeat at dinner. A lot of people will find my version too bitter, so I’ll add some options to sweeten it in the notes at the end 🙏

Nutrition – 6 x 300 (22P, 26C, 13F) + 3g fibre

4 medium eggs
500g cottage cheese (low fat)
500g cream cheese (reduced fat)
50g cocoa
50g corn flour (starch)
40g maple
10g vanilla essence

Method –

1) Just throw it all together, mix it and pour it into a lined baking tray

2) Bake for 40 minutes at 160C (320F)

3) Once it cools place in the fridge for at least 6 hours (overnight is ideal)

Notes – this comes out a kind of bitter chocolate cheesecake that I eat with fruit compote. To sweeten it more you can reduce the cocoa used to 40g, then add more vanilla, an artificial sweetener or my favourite …. condensed milk. The condensed milk option (instead of maple syrup) is glorious but does add calories/sugar. It tastes frugging great though
