Super easy stir fry, ready in under 30 mins | Easy Chicken Lo Mein, the family will LOVE it!

One of the things I love about stir fry dishes like this, is that you barely have to cook the veg. This means not only do they stay sweet and crunchy, but they’re also super quick to cook and they keep their lovely vibrant colour.

Stir-frying is a great way to make quick and easy meals that are perfect for busy days. This Chicken Lo Mein is easy to make, and it tastes delicious. Plus, it’s perfect for a quick and easy meal that the whole family will love!

Ingredients:
7 oz (200g) dried fine egg noodles
3 tbsp oil
3 chicken breasts , chopped into bite-size chunks
1 onion, peeled and sliced
2 cloves garlic, peeled and minced
1 large carrot ,peeled and sliced into matchsticks
1 large red pepper ,deseeded and sliced
20 sugarsnap (snow) peas
10 spring onions (scallions) cut into 2”/5cm lengths
4 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp kecap manis (sweet soy sauce)
¼ tsp white pepper
To Serve:
2 spring onions (scallions) chopped
1 tsp sesame seeds
1/4 tsp chilli flakes

Instructions
1. Cook the noodles in a pan of boiling water for 3-4 minutes (until just cooked through). Drain and rinse in cold water to prevent them sticking together and put to one side.

2. Meanwhile, heat the oil in a wok. Add the chicken and cook for 5-6 minutes until cooked through.

3. Add the sliced onion and cook for a further 2 minutes to slightly soften.

4. Add the garlic, carrots, red pepper, sugarsnap peas and spring onions (scallions). Stir and cook for 1 minute.

5. Add in the noodles, oyster sauce, soy sauce, kecap manis and white pepper. Fry on a high heat, tossing everything together until warmed through – about 3-4 minutes.

6. Serve topped with chopped spring onions (scallions), sesame seeds and chilli flakes.
Notes

Noodles
I like to use fine egg noodles for this recipe, but you can use medium noodles, wholewheat noodles, rice noodles. Even cooked spaghetti and tagliatelle works well (sounds strange to use pasta in a Chinese recipe, but it absorbs the flavours really well).
You can also use ready-cooked noodles, but you may need to run them under some hot water first to separate them.

Kecap Manis
Kecap Manis is a thicker (syrup-like in consistency), sweeter Indonesian soy sauce. You can find it in most larger supermarkets and Asian stores. It makes a great addition to stir fries, or as a dipping sauce, so it’s well worth having it as a store-cupboard ingredient.If you don’t want to buy it, you can replace with an extra 1+½ tablespoons of soy sauce and a tablespoon of light brown sugar. It’s not quite the same, but will still taste delicious.

TahDig – finally #shorts

TahDig – this one took me a while to get right, I would like some more colour but we are getting closer… thanks for all the tips in the last one I posted.

Ingredients

– 3 cups basmati rice
– small pinch saffron
– 50g butter
– salt
– 4 tbsp olive oil

Method

1. Start by soaking the rice in cold water for 30 minutes, then rinse the rice well.
2. Place a large pot of salted water on to boil. Once it’s boiling, cook the rice for 4-5 minutes or until it’s just over halfway cooked.
3. Remove the rice and run it under cold water to stop the cooking.
4. Grind the saffron in and add 2 tablespoons of boiling water.
5. In a clean pot you have a lid for (non-stick works best), heat the oil over medium heat and add the rice. When half of the rice is in the pot pour over the saffron water, then add the rest of the rice.
6. Using a wooden spoon, place 5-6 holes in the rice almost to the bottom, then break up the butter over the top.
7. Leave this on medium heat for 6 minutes before placing a clean tea towel over the top and the lid on that. Leave this on medium heat for another 6 minutes before turning it down low and cooking for 1 hour.
8. After the hour, turn the heat back up to medium-high for 5 minutes.
9. Remover from heat and let it rest for 5 more minutes before turning out.

50g or 1/3c cucumbers, small diced
Salt
Sugar
400g cooked chicken, cubed (2-3 breasts)
175g or 3/4c Kewpie mayonnaise
30g or 1/4c scallions, chopped
40g or 3Tbsp chopped sushi ginger (squeeze out excess liquid)
30g or 2Tbsp white miso
5g or 1tsp soy sauce
20g or 2Tbsp furikake

I am lucky enough to have beautiful memories ever since I was a kid. I was so close to nature and I was free to pet dogs and cats. The mother swallow weaving its long tail is walking with its kids in tea plantation without any disturbance. I really enjoy their beautiful walk in. Whenever I tried to pluck a flower or two, I would end up getting my whole body covered with mud. It is that muddy. ???? The colour of Gadapana flower bunches I used to have in my childhood keeps some signs of the colourful and bright future ahead.
I baked a cake for the very first time with my aunties at Uncle’s Bakery. That was twenty years back. That aroma still haunts in my place since then. What’s made daily brings a great taste just because of its practice. Whatever I prepare now, millions of people are waiting to taste it. That brings me an exhilarating moment.????
I put the all three trays to the Oven and baked them for around 30 minutes. Then, I took them out and let them cooled. I layered the cakes into three and decorated it using coco butter icing. I wanted to bring up a cake with the ocean weaves to show you how lasting my love for you. Mother also had prepared some sweets like Kokis, Jaggery Coconut Toffee with the help of Father. Even now, I’m enjoying the delicate aroma of Oil cakes.
Early morning pirith chanting at the temple makes everyone calm and quite. That brings the peace to every mind. Mother prepared Milkrice with a delicate Lunu Miris in the morning aurora. Brother had already prepared the Cutlet mixture. The two layered cake baked specially for you and decorated with icing roses gives the picture of a castle filled with Roses. That was extra ordinary. Father had kept Banana on the dining table. That was grown up in our garden and kept it for you. Everything is arranged this nice for you who keep counting on us every day.????
Time flies so fast. Though it has been three years since you came to me, this blooming bond we have in each lasts forever. The words you have for me make me pleased and calm. Your words heal me whenever I’m down. I owe you for the love you share with Mother, Father, Brother and our pets. The whole nature blesses you. We are truly blessed to be yours. I love the way you accept the bond with my brother and me and how you admire everything we do together. I‘m so very much thankful and grateful to the man down to earth.????????????

Prepare Creamy Chocolate Dip:
-Water as required
-Dark chocolate semi sweetened 80g
-Olper’s Cream ½ Cup (100ml)
-Instant coffee ½ tsp
-Namak (Salt) 1 pinch
-Makhan (Butter) unsalted 1 tbs
-Olper’s Milk ¼ Cup (60ml)
Prepare Churros:
-Makhan (Butter) unsalted 50g
-Olper’s milk ½ Cup
-Water ½ Cup
-Sugar 1 tbs
-Namak (Salt) 1 pinch
-Maida (All-purpose flour) 1 Cup (120g)
-Anday (Eggs) 3
-Vanilla essence ½ tsp
-Cooking oil for frying
-Bareek cheeni (Caster sugar) ½ Cup
-Darchini powder (Cinnamon powder) ½ tbs

Directions:
Prepare Creamy Chocolate Dip:
-On a double boiler,add dark chocolate,cream,instant coffee & mix well until chocolate melts.
-Add salt,butter,milk & mix until well combined.
-Let it cool.
Prepare Churros:
-In a saucepan,add butter,milk,water,sugar,salt & turn on the flame,whisk well & bring it to boil.
-On low flame,add all-purpose flour & mix well until dough is formed.
-Take out in a bowl & let it cool completely.
-Add eggs,one by one,vanilla essence,beat well & transfer to a piping bag with a 1M nozzle.
-In a wok,heat cooking oil & carefully pipe out mixture into preheated oil,cut end with clean scissor & fry on medium low flame until golden brown.
-Carefully pipe out mixture in a heart shape on a 4×4 inch of butter paper & fry on low flame until golden brown.
-In a box,add caster sugar,cinnamon powder & mix well.
-Add churros,cover & shake well.
-Serve churros with prepared creamy chocolate dip!

-Karahi mein cooking oil garam karein aur carefully mixture ko preheated oil mein daltay jayein aur scissor sa cut ker lein aur darmiyani halki ancch per golden brown hunay tak fry ker lein.
-4×4 inch butter paper per carefully mixture ko pipe out ker lein aur darmiyani halki ancch per golden brown hunay tak fry ker lein.

Homemade Tutti Frutti with Watermelon Rind Recipe by Food Fusion

Make and store perfect homemade tutti frutti using watermelon rind. We normally throw these watermelon rinds away but now you can make and store tutti frutti to be used all year long. #HappyCookingToYou #FoodFusion #watermelonrind #Watermelon #digitalammi

Recipe in English:

Ingredients:
-Tarbooz ka chilka (Watermelon rind) as required
-Boiling water as required
-Sugar 3 Cups
-Water 1 & ½ Cup
-Kewra essence few drops
-Red food color as required
-Green food color as required
-Orange food color as required

Directions:
-Peel watermelon rind with the help of peeler.
-Cut white part into small cubes & set aside (approx. ½ kg).
-In a pot,add water & bring it to boil.
-Add watermelon cubes & bring it to boil,cover & cook on medium flame for 10-12 minutes then strain & set aside.
-In a pot,add sugar, water,mix well & cook until sugar is dissolved.
-Add kewra essence,boiled watermelon cubes,mix well,bring it to boil,cover & cook on low flame for 20-25 minutes.
-Divide prepared watermelon cubes in 3 separate bowls.
-Add red food color,green food color & orange food color in each bowls respectively,mix well & allow to soak for 5-6 hours or overnight.
-Drain excess liquid & let it air dry for few hours.
-Once the tutti-frutti dries off completely it will not be sticky,mix the colors together.
-Can be stored in an airtight container for up to 6 months (shelf life) or refrigerate until use.

Recipe in Urdu:

Ajza:
-Tarbooz ka chilka (Watermelon rind) as required
-Boiling water as required
-Sugar 3 Cups
-Water 1 & ½ Cup
-Kewra essence few drops
-Red food color as required
-Green food color as required
-Orange food color as required

Directions:
-Tarbooz ka chilka ko peeler ki madad sa peel ker lein.
-White part ko small cubes mein cut ker lein & side per rakh dein (approx. ½ kg).
-Pot mein pani dal ker ubal lein.
-Tarbooz ka cubes dal ker ubal lein aur cover ker ka darmiyani ancch per 10-12 minutes kliya paka lein phir strain ker ka side per rakh dein.
-Pot mein cheeni aur pani dal ker ache tarhan mix karein aur cheeni ghul janay tak paka lein.
-Kewra essence & boiled tarbooz ka cubes dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 20-25 miutes kliya paka lein.
-Tayyar tarbooz ka cubes ko 3 portions mein divide ker lein.
-Alag alag bowl mein red food color,green food color & orange food color dal ker ache tarhan mix karein aur 5-6 hours ya overnight soak hunay kliya chor dein.
-Excess liquid ko drain ker lein aur few hours kliya air dry ker lein.
-Jab tutti-frutti completely dry ho jaye to mix ker lein.
-Airtight container mein dal ker 6 months kliya store ker saktay han (shelf life) or use kernay tak
refrigerator mein rakh dein.

Sliding home doubles size with walls-on-rails, brings Nature in

Caspar Schols built his first shapeshifting house in his mother’s backyard as her writing cabin that, by sliding a room-on-rails, could convert into a place to sleep under the stars.

He has since perfected his expandable home with 10 prototypes: his most recent model is robust enough to serve as a primary residence and has a bathtub and guest bed hidden in the floor.

The house can be opened up – on sunny days, for nature-watching, or just to sleep directly under the stars – with just a push. The entire walls and ceiling of the house move, but anyone can propel this 3,000 kilograms (over 6000 pounds) room-on-rails because Schols created a system that is “super low friction”.

To create a well-insulated home that has walls that move, Schols and his team designed the rails with wind labyrinths to trap the air and added brushes to any moving surface to prevent airflow.
