Ingredients

½ cup (115 g) unsalted butter, at room temperature
½ cup (100 g) packed light brown sugar
½ cup (100 g) granulated sugar
1 large egg, at room temperature
1 tsp vanilla extract
1 ¼ cup (185 g) all-purpose flour
1 Tbsp (7.5 g) cornstarch
½ tsp (2.5 g) baking soda
½ tsp (2.5 g) salt
1 ½ cup (262 g) chocolate chips
1 cup (100 g) lightly toasted, coarsely chopped pecans (optional)

Directions

1. Cream the butter with the brown sugar and granulated sugar together well. Beat in the egg and the vanilla.

2. In a separate bowl, sift the flour with the cornstarch, baking soda and salt. Add this to the butter mixture and stir until blended. Stir in the chocolate chips and pecans (if using).

3. Using a small ice cream scoop or a tablespoon, scoop spoonfuls of dough (about 2 Tbsp) shape them into a ball and place onto a parchment lined baking tray or a plate. Chill the scooped cookies for at least an hour, or once chilled, the cookies can be frozen for baking later.

4. Preheat the oven to 325ºF (162 C). Arrange the chilled scooped cookies onto parchment-lined baking trays, leaving 3 inches between the cookies. Bake for 15-18 minutes, until browned around the edges. Cool the cookies on the baking tray. If baking cookie dough that has been frozen, arrange the frozen cookies on the baking tray and let them thaw for 20 minutes at room temperature before baking as above.

Let cool slightly and enjoy.

In the premiere episode of ‘Price Points’, Epicurious challenged cheese expert and noted author Liz Thorpe to guess which one of two cheeses was more expensive. Liz breaks down cheap vs expensive parmesan cheese, goat cheese, gruyère cheese, feta cheese, and blue cheese. For each round of cheap cheese vs expensive cheese, Liz visually analyzed, smelled, then executed a taste test before guessing which cheese cost more. Once the prices were revealed, Thorpe explained why a specific cheese making process costs more and dives into the specifics of how to make the different cheeses.

Hey Gang!
We’ve got some waiting to do for this Lumber. To tell you the truth, there are two pretty big obstacles we have to get over in order to even GET the lumber to the job site. So instead of waiting weeks and weeks, we decided to stay busy and head to island of Kauai to help Rad’s dad (86) with his dysfunctional and unsafe bathroom. We love doing little bathroom remodels like this because it makes such a huge difference in the home and in the homeowners day to day life!
This will be a 3 part series and you’re not going to want to miss how this thing turns out! Lots of people with limited space out there, and this series we take full advantage of the space.
We’re as eager to get framing as you are! But strap in for a fun remodel in the middle of the pacific ocean. Thanks for watching, and we’ll see ya in the next one!

@alexawhatsfordinner is ALL about the “treat yourself” mentality, especially when it comes to breakfast! ? In honor of #MentalHealthAwarenessMonth, take time to slow down and make a pretty & nourishing breakfast, like these mini avocado square toasties (recipe below‼️)

Ingredients
-2 slices sourdough bread
-1 Tbsp extra-virgin olive oil
-1 tsp white vinegar
-1 tsp kosher salt, plus more to taste
-1 large egg
-2 Tbsp pine nuts
-1 ripe avocado
-Juice of ½ a lemon
-Freshly ground black pepper
-Honey
-Red pepper flakes
-Pomegranate arils

Preparation
-Cut the bread into small squares, then drizzle the olive oil over both sides of the squares.
-Heat a large pan over medium-high heat, then toast the bread squares until golden brown on both sides. Remove from the pan.
-Bring a small pot of water to a gentle boil. Add the white vinegar and salt. Crack the egg into a small ramekin or dish. Use a spoon to swirl the water in one direction to create a vortex, then carefully drop the egg into the center. Cook for 4 minutes, then carefully remove with a slotted spoon and place onto a paper towel-lined plate to drain.
-Heat a small pan over high heat. Add the pine nuts and toast, shaking the pan or stirring frequently, for about 3 minutes, until the pine nuts are golden brown.
-Cut the avocado in half lengthwise and remove the pit. Carefully peel the skin off the back of the halves, then thinly slice the flesh crosswise. Gently press down on the avocado slices to fan out and flatten.
-Place the toasted bread squares on top of the avocado slices, then trim the avocado around the squares, creating a section of avocado that fits perfectly on the toast when flipped over.
-Top the avocado with lemon juice, salt, black pepper, honey, red pepper flakes, the toasted pine nuts, and pomegranate arils. Carefully place the poached egg on top of one of the avocado toast squares.
-Enjoy!

Chicken Piccata

Ingredients

2 split (1 whole) boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
1 extra-large egg
1/2 tablespoon water
3/4 cup seasoned dry bread crumbs
Good olive oil
3 tablespoons unsalted butter, room temperature, divided
1/3 cup freshly squeezed lemon juice (2 lemons), lemon halves reserved
1/2 cup dry white wine
Sliced lemon, for serving
Chopped fresh parsley leaves, for serving

Directions

Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

Place each chicken breast between 2 sheets of parchment paper or plastic wrap and pound out to 1/4-inch thick. Sprinkle both sides with salt and pepper.

Mix the flour, 1/2 teaspoon salt, and 1/4 teaspoon of pepper in a shallow plate. In a second plate, beat the egg and 1/2 tablespoon of water together. Place the bread crumbs on a third plate. Dip each chicken breast first in the flour, shake off the excess, and then dip in the egg and bread crumb mixtures.

Heat 1 tablespoon of olive oil in a large saute pan over medium to medium-low heat. Add the chicken breasts and cook for 2 minutes on each side, until browned. Place them on the sheet pan and allow them to bake for 5 to 10 minutes while you make the sauce.

For the sauce, wipe out the saute pan with a dry paper towel. Over medium heat, melt 1 tablespoon of the butter and then add the lemon juice, wine, the reserved lemon halves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Boil over high heat until reduced in half, about 2 minutes. Off the heat, add the remaining 2 tablespoons of butter and swirl to combine. Discard the lemon halves and serve 1 chicken breast on each plate. Spoon on the sauce and serve with a slice of lemon and a sprinkling of fresh parsley.

CHOCOLATE GOOEY BROWNIE ICE CREAM

FOR THE ICE CREAM BASE:
1 1/3 cups whole milk
1/2 cup granulated sugar
2 tablespoons light corn syrup
2 tablespoons dry milk powder
1/4 teaspoon xanthan gum
1 1/3 cups heavy cream

FOR THE BROWNIES:
1/2 cup/115 grams unsalted butter (1 stick), cut into 1-inch chunks
3/4 cup/130 grams chocolate chips (5 ounces)
2 large eggs
3/4 cup/150 grams granulated sugar
1/2 cup/65 grams all-purpose flour
1/4 cup/25 grams unsweetened cocoa powder, preferably Dutch-processed
2 teaspoons kosher salt
1/2 cup/120 milliliters heavy cream
1 cup/240 milliliters Marshmallow Fluff

FOR THE CHOCOLATE FLAVOR:
1/4 cup granulated sugar
1/4 cup unsweetened cocoa powder

1. Prepare the base: Combine the milk, sugar, corn syrup, dry milk and xanthan gum in a medium pot and stir to combine. Set the pot over medium heat and cook, stirring often until the sugar has dissolved, about 3 minutes. Remove from heat.

2. Add the cream and whisk until fully combined. Transfer the mixture to an airtight container and refrigerate until chilled. (For best flavor, chill for about 12 hours.) The base can be stored in the refrigerator for up to 1 week or in the freezer for up to 3 months. If frozen, be sure to thaw fully before using.

3. As ice cream chills, prepare the brownies: Heat the oven to 350 degrees. Line a 9×9-inch baking dish with parchment paper and coat with nonstick spray.

4. Assemble a double boiler by placing a small saucepan filled with an inch of water over medium heat and bring to a simmer. Place the butter and chocolate in a medium heatproof bowl and set it on top of the saucepan (make sure the bottom of the bowl does not touch the water). Reduce heat to low, and stir the butter and chocolate until fully melted together. Remove the double boiler from heat and set aside.

5. In a stand mixer fitted with the paddle attachment or with an electric hand mixer, beat the eggs and sugar until light and frothy, about 3 minutes. Reduce the speed to low and stream in the chocolate mixture. Increase the speed to medium-high and mix until well combined.

6. In a separate bowl, whisk together the flour, cocoa powder and salt. Add the flour mixture to the chocolate mixture and mix on low until just combined. With the mixer running, drizzle in the heavy cream and mix until just combined, scraping down the sides as necessary. Fold the Marshmallow Fluff into the batter with a spatula or large spoon, mixing just enough to get most of it incorporated with a few streaks remaining.

7. Pour the batter into the prepared baking dish and spread into an even layer. Bake about 30 minutes, until the top is crackly and a knife inserted into the center comes out clean. Let them cool completely and cut into 1/2-inch pieces. Freeze in sealed freezer bags before using; they will keep up to 2 months.

8. Once ice cream base is chilled, mix in the flavoring: Combine the sugar and 1/4 cup water in a small saucepan, set it over medium heat and bring to a boil. Remove from the heat and whisk in the cocoa powder until it is smooth and glossy. Let cool to room temperature.

9. Pour the chocolate syrup into the chilled ice cream base and whisk to combine. You may want to refrigerate this mixture until cold if your base was not chilled ahead of time, or if using a pre-frozen bowl machine.

10. Pour the mixture into an ice cream maker and churn, according to your machine’s instructions, until it has the texture of soft serve.

11. When churned, layer the ice cream and brownies in a freezer-friendly container. Cover with parchment paper and freeze until firm, about 6 hours. The ice cream will keep up to 3 months.

Fried Chicken Sandwiches

Ingredients

2 cups buttermilk, shaken
1 shallot, peeled, halved lengthwise, and thinly sliced crosswise
2 garlic cloves, smashed
1 jalapeno pepper (with seeds), halved lengthwise
Kosher salt and freshly ground black pepper
3 small skinless, boneless chicken breasts (6 ounces each)
3 1/2 cups all-purpose flour
4 teaspoons baking powder
2 1/2 teaspoons smoked Spanish paprika
1 teaspoon cayenne pepper
1 teaspoon celery salt
2 (48-ounce) bottles canola oil
6 potato hamburger buns, toasted, for serving
Buttermilk Herb Mayo, recipe follows, for serving
6 Bibb lettuce leaves
Kosher dill pickles, such as Claussen, thinly sliced, for serving

Buttermilk Herb Mayo:
1 cup good mayonnaise, such as Hellmann’s
2 tablespoons buttermilk, shaken
1 teaspoon good white wine vinegar
2 tablespoons thinly sliced scallions, white and green parts
1 tablespoon minced fresh parsley
1 tablespoon minced fresh chives
1/8 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper

Directions

In a large bowl, whisk together the buttermilk, shallot, garlic, jalapeno, 2 teaspoons kosher salt, and 1 teaspoon black pepper. Place the chicken breasts between 2 pieces of parchment paper and, with a rolling pin or a meat mallet, pound them until they are evenly 1/2 inch thick. Slice each piece of chicken in half crosswise so you have 2 pieces approximately the same size. Place the chicken in the marinade, making sure each piece is well coated, cover with plastic wrap, and refrigerate for at least 8 hours or up to (but not more than) 24 hours.

When ready to cook the chicken, preheat the oven to 300 degrees. Set a wire rack on a sheet pan and place them in the oven.

In a large bowl, whisk together the flour, baking powder, paprika, cayenne pepper, celery salt, 1 tablespoon kosher salt, and 1 1/2 teaspoons black pepper and set aside.

Pour oil into a medium (9-inch round by 4 1/2-inch high) Dutch oven, such as Le Creuset, until it is 2 inches deep. Clip on a candy thermometer and heat the oil over high heat until it reaches 350 degrees F. Meanwhile, lift the chicken from the marinade, dredge it in the flour mixture, submerge it again in the marinade, then again in the flour mixture, lightly shaking off the excess. Transfer the chicken to a plate or sheet pan until ready to fry.

When the oil is 350 degrees F, carefully lower 3 pieces only into the oil with tongs and adjust the heat to keep the oil at 350 degrees F. Don’t crowd the chicken! Cook for 5 minutes, turning once to brown evenly. With a slotted spoon, transfer the chicken to the sheet pan in the oven to keep warm. Repeat with the remaining chicken. Sprinkle all the chicken with salt and keep warm for up to 15 minutes, until ready to serve.

To assemble, place the bottom of each bun on a plate, spread with some of the Buttermilk Herb Mayo, then a lettuce leaf, 4 pickle slices, then a piece of chicken. Spread the underside of the top bun generously with more of the mayo and place on top of the chicken, mayo side down. Serve while the chicken is still warm.

Buttermilk Herb Mayo:
Whisk together the mayonnaise, buttermilk, vinegar, scallions, parsley, chives, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Cover and refrigerate until ready to use.

How LuxeConsult Calculates Market Share: *This text is taken directly from LuxeConsult’s report.

Unlike the fast-moving consumer goods (FMCG), beverage, or retail sectors, there is no market share data published on the Swiss watch sector by consultancy firms such as Nielsen, GfK, or Kantar (which use either scanner data or panels to calculate the market shares). This is due to the impracticality of conducting such surveys and the discreet nature of the Swiss watch industry.

In order to calculate market shares in the Swiss watch industry, we first estimated
the number of units sold and the turnover of each of the top 65 watch brands.
Our estimates here are based on figures reported by public companies, public
statements made by the CEOs of watch brands over the years, direct discussions
with watch brands, data from Fédération de l’Industrie Horlogère Suisse (FHS), and
dialogue with industry contacts.

In the second step, we estimate the share of retail sales in each brand’s turnover.
This is done by estimating the total number of directly operated stores for each
Brand, as well as examining statements made by watch brand CEOs. This second
step (i.e.estimating the split of sales between retail and wholesale for each brand)
is often overlooked and, in our opinion, can lead to significant errors when trying
to estimate market shares in the industry, given the following: a) The split varies
substantially by brand. For example, we estimate that close to 100% of Rolex
watches are sold by third-party retailers (i.e. wholesale). At the opposite end of
the scale, we estimate that less than 40% of Swatch brand sales are done at
the wholesale level. b) The retailers’ significant markup (from ~28% for the strongest
brands like Rolex and Patek Philippe to ~50% for brands less in demand) creates
significant distortion in market share calculations.
