Century eggs in congee is unmatched even if you don't like century eggs

Century eggs are not my favorite… in fact I just don’t care for them on their own as some might (little Jon can enjoy them on their own). But they are unmatched as the flavoring ingredient in congee. They add so much depth and complexity that I try to include them into most congees that I make.

    Huh I haven't ever cooked my century egg in my congee I've always just used it as a topping. You and your fiance make it sound good so I guess Imma try that.

    Bourdain did an episode on “smelly feet cheese” that made the case that a small amount of bad flavor or odors in an otherwise pleasant but boring dish adds complexity that elevates the flavor from plain/boring/unobjectionable to interesting/preferred.

    Where that cutoff point between interesting & off-putting lies can vary by individual though. So you find straight century eggs off-putting but some century egg as part of an otherwise bland congee adds the complexity to elevate the dish from filling to tasty. As someone who can’t bring myself to eat century eggs but want to try them, I’ll see if I can use your one simple trick™️ here.

    I hate century eggs. I tried one once and I couldn’t get past the texture and the fact that there’s an entire grown ass dead bird just there.

    I love century eggs! I can’t eat congee without them. If I’m eating century egg in any other way, I steam them first before shelling. That significantly reduces the unpleasant aroma. Then I eat them with sweet soy, green onion, and silken tofu, or in a green salad, or with freshly steamed short grain white rice and Laoganma spicy chili crisp. I love century eggs in so many ways! Do you prefer chicken or duck eggs?

    The century egg also adds a sort of creamy texture to an already cream-like texture in congee itself. I'd imagine adding in minced pork and cut cuttlefish to the congee mix for both additional nutrition and contrasting textures making it more palatable than it already is.
