Hi cowboy Kent. Micheál from Ireland calling. Wow !, another wonderful dish. Sadly, Irish Supermarkets only sell sausage meat at Christmas, but I have a solution. I am going to Purchase some good quality Irish sausages and remove the meat from the "sleeve". Yep, like so many of your other dishes, I like to try your suggestions and recipes on my guests. It's funny in Mexico there are some enchiladas called "enchiladas suizas" ( suizas = swiss ), of course they don't come from Switzerland, but they have a lot of cream and cheese, very tasty!
