  1. I do this with Costco rotisserie chickens in the instant pot. Save your veggie trimmings (onion bits, celery, carrots, etc.) in a Ziploc bag in the freezer until stock day. From 4 or so chickens, i pull most of the meat off them and vacuum seal them for other meals and use the remaining meat and bones from all of them to make the stock. Use the soup function or 20m at high pressure and a natural release. I dont add herbs to the base stock to leave it more versatile. Bonus points if you freeze the stock in silicone portion containers and then vacuum seal. Need stock, pop out a pre measured cube.

  3. I did not know herbs would make it bitter after 30 minutes. I wonder if roasted herbs should be simmered for even less time.
