For the caramel you say 3 oz of brown butter but the description says 5 oz. It looks more like you're using 5 but there's a discrepancy and wanted to ask.

The grated dough technique is super cool. I think I'll stick with just rolling it out, slapping it into the tarte pan and patching the tears 😅 Might not be as even, but much quicker.
You need to try it with Dulce de leche instead of caramel! 100 times better!

Corn syrup is really hard to come by where I live in Europe (Germany). Is there anything else I could use to prevent crystallisation? Like agave syrup perhaps?

good flavor combos here and what looks like a fun dessert to make. I'll definitely be doing this for father's day. Ive never heard of that butter and would never know where to find it so I'll stick with my unsalted organic butter, made from cows that have not been fed genetically modified seed. Never fails in any single recipe and tastes literally more like pure butter than any genetically modified wanna be. Thanks!
