This salad was perfect for a hot summer day today! The only issue I had with it was from the salt, the cucumber released a lot of water and made the dressing a little diluted. I would recommend salting the cucumber in a strainer and let the excess water drain for 5-10 min before adding them to the bowl with the dressing.

My Daughter and Son-in-law gave me some cucumbers and a couple of jalapeños from their garden. I wasn't sure how I waited to use them. Now I know. Looks delicious and the peppers should add a nice kick.
