Ingredients
8 large russet potatoes
5 eggs
1 cup finely chopped celery (4 large stalks or 8 small stalks
1/2 medium onion
1 large pickle + 4 Tbsp Pickle juice
3 Tbsp yellow mustard (1 Tbsp if you want mild flavor)
2 cups Mayonaise (extra creamy use 3 cups : )
1 tsp black pepper
1/2 Tbsp salt
1/4 tsp sugar

TIP❣️
Keep all ingredients cold
Make sure potatoes are boiled till soft
This recipe works great with any kind of potatoes, but best with russet potatoes
For BEST flavor refrigerate a minimum of 10 hours to allow flavors to full shine

  3. Those little black spots are potato eyes and are jammed full of extra nutrition. You'll never see them in the potato salad so leave them on. Of course if the salad is for guests, remove the bruises, but I also leave them just for me, they taste fine. Even weirder, I leave the skins since I love the flavor of russet potato skins:)
