    • Buffalo sauce
    • Greek yogurt or light mayo
    • Barbecue rub
    • Water

    Instructions:
    • Make the Flour Rub:
    • In a small bowl, mix:
    • A large pinch of flour
    • Half that amount of cornstarch
    • Sprinkles of baking powder
    • A little chili powder
    • Onion powder
    • Garlic powder
    • Smoked paprika
    • This is used as a flour rub, not a dredge.
    • Prepare the Chicken:
    • Use bone-in, skin-on chicken thighs (this method won’t work without the skin).
    • Season the chicken thighs lightly with salt.
    • Rub the flour mixture generously over both sides, making sure to hit every crevice.

    Air Frying:
    • Lightly spray the non-skin side of the chicken.
    • Place the chicken in the air fryer basket skin-side up.
    • Give one final spray over the top.
    • No need to preheat.
    • Set the air fryer to 375°F.
    • Cook for 22 minutes.

    Make the Dipping Sauce:
    Mix together:
    • Buffalo sauce
    • Greek yogurt or light mayo
    • Your favorite barbecue rub
    • A splash of water (for volume)
