if i wanted to make an earl grey pudding using this method, should i substitute the cocoa powder for anything, or just leave it out bc its just flavor?

Hi John this comment has nothing to do with pudding. Actually it’s about your fantastic recipe for white chocolate macadamia nut cookies. These cookies have totally driven my son off of the deep end he loves them and I am not very far behind him. The caramelization of the white chocolate is key ???? and although it takes some time, it is totally worth it. That caramelized chocolate makes the cookies. I made a batch for him on Saturday, I got 22 nice sized cookies he devoured almost half of them before he left my house to go home. He just bought some more macadamia nuts for me to make him some more cookies. My son (42 y/o) the Cookie Monster. ????
My favorite pie is my mother's homemade chocolate pie. The custard is similar to this pudding.
