In the USA, and other developed countries, pigs are vaccinated against trichinosis, so it's not an issue. Pork, especially chops, loin or steaks do have a better mouthfeel when well cooked, unlike beef that tastes excellent when rare.

You must not like sharp knives. I cringe every time you scrape the blade of your knife across your cutting board to gather your chopped veggies. It dulls the knife. Turn it around and use the spine instead.
