  3. Oooh that flip trick in the middle of baking, I need to incorporate that. The bottom of my bagels always came out super dark but the bagel tops weren't done yet. Flipping them might fix that. Love learning new tricks to add to my repertoire. Thanks John!
    The minute, sugar-water bath never worked all that well for me. After resting after baking, the bagels would shrivel up, weird right? I shortened that time to 20-30 seconds per side on near boiling water. They maintained their fresh-baked exterior that way. I think my oven might just be weird (it's an 80s era electric oven) so it doesn't regulate heat for a proper bake.

  5. molasses works wonders too, if you don't have barley malt on hand. Also, try rolling them in seeds on both sides before baking. YUMMO!

  6. You’ll get way better flavor making up a fresh mix of toppings, lots of the toppings that are assembled are stale..
