EAT | Baked Banana Oatmeal

INGREDIENTS
• 2 cups old-fashioned oats

• 1/3 cup hemp hearts

• 1/3 cup coconut sugar or brown sugar

• 1 tsp baking powder
• 2 tsp cinnamon
• ¼ tsp salt
• 2 cups almond milk
• 1 large egg
• 1 tsp vanilla
• 3 TBSP melted refined coconut oil

• 2 mashed bananas

DIRECTIONS
1. Preheat oven to 350ºF and butter or line a muffin tin ( or 9 inch baking dish).
2. Mix oats, sugar, baking powder, cinnamon and salt in a medium bowl.
3. In another bowl, whisk together the almond milk, egg, vanilla, coconut oil and banana.
4. Add oat mixture to wet ingredients and stir to combine.
5. Pour into baking dish and bake for about 25 minutes. Top with maple syrup and enjoy!

Note: this recipe can be made ahead by preparing oatmeal the night before, storing in fridge and baking in the morning. Baked oatmeal also reheats very well!
