EAT | Italian Wedding Soup (Semi-Homemade Dinner)

INGREDIENTS
• 1-2 TBSP olive oil
• 1 chopped onion
• 2 chopped carrots
• 6-8 cups chicken broth
• 1 package (or 6 cups) baby spinach, washed
• 1 package cooked pearl or Israeli couscous
• About 20 thawed party size meatballs

DIRECTIONS
1. Heat olive oil in pan. Sauté onions and carrots (add a little salt and pepper) until soft (about 8 minutes).
2. Add meatballs and cook 2 minutes until the flavors begin to release.
3. Add spinach and cook until it begins to wilt. Add chicken broth and cook about 15 minutes.
4. Pour couscous (about 1/3 cup per bowl) into individual bowl and top with soup.
5. Store couscous separately as it absorbs a lot of the liquid from the soup!

  2. Are there any alternatives that could be used instead of couscous(sp)? I have celiac diseaze ancd since this is a form of wheat pasta, i can't use this.

  12. My dad buys the Boston butt but he has his own secret family recipe coats it in that smokes it on the smoker then we dig in ( it usually takes a week to do though because we marinate it very thoroughly so everything is delicious)
