EGG 65
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4

Ingredients
For Omlette
10-12 no. Eggs, अंडे
3-4 no. Green chillies (spicy & chopped) हरी मिर्च
½ inch Ginger, grated, अदरक
Salt to taste, नमक स्वाद अनुसार
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1½ tbsp Coriander leaves, chopped, धनिया पत्ता
¼ cup Processed cheese, grated, चीज
½ tsp Oil, तेल

1 tsp Oil, for frying, तेल

For Ginger Garlic paste
3-4 no. Green chillies, less spicy, हरी मिर्च
Salt to taste, नमक स्वाद अनुसार
5-6 no. Garlic cloves, लहसुन
½ inch Ginger, अदरक

For Coating
Prepared Omlet cubes, तैयार किया हुआ ऑमलेट क्यूब्स
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ cup Curd, beaten, दही
1 tsp Gram Flour, बेसन
1 tsp Cornstarch, कॉर्नस्टार्च
1 tsp Rice flour, चावल का आटा
1 tsp Refined flour, मैदा
A pinch of Asafoetida, हिंग
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वाद अनुसार
Oil for frying, तेल

For Tempering
½ tbsp Oil, तेल
2 sprig Curry leaves, करी पत्ता
4-5 Dry kashmiri red chilies, broken into half, सूखी कश्मीरी लाल मिर्च
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Fried Egg cubes, तले हुए अंडे के क्यूब्स
1 sprig Curry leaves, करी पत्ता
1 tbsp Tender Coriander stems, धनिया के डंठल
½ tsp Black peppercorns, crushed, काली मिर्च के दाने
Salt to taste, नमक स्वाद अनुसार
A pinch of Sugar, optional, चीनी
⅓ tsp Lemon juice, नींबू का रस

Garnish
Coriander sprig, धनिया पत्ता
Fried curry leaves, तले हुए करी पत्ते

Process
For Omlet
In a large bowl, add eggs, green chillies, ginger, salt to taste, degi red chili powder, coriander leaves, processed cheese, oil and mix everything well.
In a pan, add oil, once it’s hot, add the egg mixture, cover it with the lid and cook it for 4-5 minutes on medium flame.
Cut it into medium size cubes and keep it aside for further use.

For Ginger Garlic paste
In a mortar pestle, add green chilies, salt to taste, garlic cloves, ginger and make a coarse paste.
Keep it aside for further use.

For Coating
In a large bowl, add prepared omelet cubes, ginger garlic paste, curd, gram flour, cornstarch, rice flour, refined flour, a pinch of asafoetida, degi red chili powder, salt to taste and coat everything well.
Keep it aside for further use.

For Frying Eggs
In a kadai, add oil, once it’s hot, add coated egg cubes, fry until half done and transfer it to an absorbent paper.
Re-fry the egg cubes in smoky hot oil until it’s golden in color and is crispy in texture.
Transfer it to a plate and keep it aside for further use.

For Tempering
In a kadai, add oil, once it’s hot, add curry leaves, dry kashmiri red chillies, ginger garlic paste and saute it well.
Add degi red chili powder, fried egg cubes, curry leaves, tender coriander stem, crushed black peppercorns, salt to taste, sugar, lemon juice and toss it well.
Transfer it to a serving dish and garnish it with coriander sprig & fried curry leaves.
Serve hot.

  1. Hi Brar ji. I am a senior citizen and normally avoid viewing reality shows in TV. Just by viewing 2/3 episodes of MasterChef along with my family members, I have become your fan. I am very much impressed by your personality and your way of deliberation with the contestants.
    I reside at Kolkata and would love to visit any of your restaurant, if any at Kolkata and meet you personally.
    I don't know whether I shall get this opportunity or not.

  2. The soldiers coming out of garrison on an "out pass"and visiting the nearby civilian market place to eat or buy the groceries used to frequent this restaurant. It was a dry chicken snax which was listed at serial no 65 in the menu of the hotel which obviously the British soldiers couldn't pronounce and used to order by the number of the dish in the menu. Hence ,the Chicken 65. I may be wrong here but this is what my fauji history tells me.
    A very well prepared dish surely worth trying. Bravo Ranveer,????????????

  4. Sir Great Recipe ???? but one #correction the city of #Maadarasapattanam (which British people changed to Madras) is more old than British empire itself, so dont say they created the city. They just ruled over it and built buildings and port so that they can use it to squeeze more money from India. Thanks ????
