Steak n’ Shake announced that they are now cooking their fries with beef tallow instead of vegetable oil, which has made customers worried about how this will affect the overall taste.     Explain your methodology. How hot was the oil? How long was it cooked for? Was is single fried or double fried? What kind of potato did you use? How did you make sure the thickness of the fries were uniform? What color grade did you use to measure goldenness (if it wasn't completely arbitrary)? Did the fries all have the same sitting temperature for the same amount of time before going into the frier?

    this was quite the crunchy golden experiment, at least I know if I want crispy crunchy fries, peanut oil is the way to go. Wish there was a table at the end of this video highlighting the rankings of each oil used for frying.

    How did you make a video about the health of oils without any mention of Omega 3 fatty acids? The quantity of Omega 6 doesn’t matter much, what matters is the ratio of Omega 6 vs Omega 3 you get in your diet. Seed oils have tons of O6’s with virtually none of the O3s, that is why it’s so bad for you. Beef tallow is much more balanced that way.

    Is that enough to make beef tallow β€œhealthier”? Debatable, but it’s pretty crazy to not bring that up in the discussion.

    but there also air fries or some people like to cook them in oven

    Canola oil (from what I've heard from my Prep Food dad) is mostly used for frying sweets. Example, donuts, churros, cookies, etc.

    I think you should also test non-wagyu beef tallow, as well as lard. Wagyu beef tallow works better for meats, and for some sauces, not for vegetables like potatoes.
