Strawberry Pie
Crust:
2 1/2 c. Flour
2(+) t. Sugar
1 t. Salt
1 c. Butter (I use salted)
1/2 c. Ice water
Filling:
6 c. Frozen strawberries
1 c. Sugar
1 1/2 t. Lemon juice
1/2 c. Cornstarch
Crust: (Do this at least 2 hours prior to pie assemble so it has time to chill). Mix flour, sugar and salt together. Add cubed butter. Cut the butter into dry ingredients (with party cutter, two forks, or food processor) until the mixture resembles pea-sized bits. Add 1/2 c. Ice water, 1-2 T. At a time, stirring after each addition, until dough forms large clumps. Pour mixture out onto a slightly floured counter/board and form together into a ball. Cut in half. Wrap each half in Saran Wrap, press down slightly to form a rough, thick disc, then chill for 2+ hours. Roll out on lightly floured surface to form crust.
Filling: Preheat oven to 350 degrees f. Mix strawberries and lemon juice in a medium saucepan. In separate bowl, mix together sugar and cornstarch. Pour over strawberries. Cook mixture on medium-low heat for about 15 min. Until the strawberries look soft and the mixture is fully incorporated. Turn heat up, let boil for 5 minutes- stirring constantly. Remove from heat after 5 minutes. Let cool slightly before pouring into pie shells.
Pour filling into bottom crust. Top using a whole crust or lattice (or whatever design you’d like).
Bake for 35-40 min or until top crust is golden brown. Rotate as needed so it cooks evenly.
Serve warm with ice cream! So yummy!

I pretty much gave up. I haven't water my plants in two days going on three. It's too hot.
The pie looked awesome. It was funny before your video, there was a FELCO Ad that was really cute. A man (another brand shears) & woman (had the Felco shears), they were trimming up a bush, but the lady made a swan topiary.

A very calming and peaceful video, just getting stuff done (mostly) indoors to combat the heat! When you made the pie, Laura, great memories came back when I was a child and my Mom used to make pies. My brother and sister and I used to look forward to the "pinwheels" she would make with the leftover crust. She would sprinkle the crust with cinnamon and sugar and roll it up and cut them into small pieces, placing them on a baking sheet. They were so wonderful coming out of the oven with a glass of milk!! I can smell them now. Thanks for the memories, as that was a long time ago and I'd hadn't remembered pinwheels in such a long time!!

Thank you for your wonderful instructional and uplifting videos. You just taught me to use my rolling pin to roll up my pie crust to place it in the pie plate. Many years ago a bachelor gave me some mincemeat with instructions to sprinkle flour in the bottom of my pie plate before laying in the pie crust. It makes removing slices of pie so easy. Hi..if you have that oven issue you can have someone come out and re-calibrate your oven and check on that hot area..there may be a burner clog in that element (if its gas) thats clogged and preventing a flame to be there..in the cooler part as opposed to the warmer part..but in any case that can be corrected by a technician. Then its all bake away for ya……w/o worry………Love all your content and great friendly personality……..Thanks so much for what you do..Bob

You are such a sweetie❤️Your mom is so lucky to have you! Beautiful bouquet! I have a fresh strawberry pie recipe that is easy and fabulous. ( your pie was gorgeous) I buy a Keebler sugar cookie pie crust in the baking isle of the store ( or graham cracker ) Combine in a sauce pan: 1 cup cold water, 3/4 cup sugar, 3 tablespoons corn starch, and 1/4 cup strawberry jello (dry). Bring to a boil and add 1 tablespoon butter and 1/2 teaspoon vanilla. Let the sauce cool ( but don’t chill). While it’s cooling stem and half 1 quart of fresh strawberries. Spread a little of the warm sauce on the bottom of your pie shell. Layer berries on top of the sauce. Repeat layering berries and sauce until your pie shell is filled…..ending with last layer of sauce on top. Chill in refrigerator until set. Serve topped with whip cream or cool whip. Delicious! If you can’t find the Keebler sugar cookie crust you can just use a regular pie crust that has been blind baked until brown…..but the Keebler crust is so delicious!🍓🍓🍓

Pie is beautiful. Pro tip I learned a long time ago. To insure bottom crust gets fully cooked and helps top notch brown too quickly; preheat the oven to 500 degrees with a sheet pan on bottom rack. Place your chilled pie on the baking sheet. Drop the temperature to 425 degrees. Bake 20 minutes. Drop temperature down again to 375 degrees and continue to bake until done. Usually another 20-25 minutes. No more possible soggy bottoms
