The way I used to cut broccoli, I’d run my knife through the whole stalk. It worked fine for separating florets, but I’d inevitable leave behind a scattering of broccoli flowers strewn across my cutting board that were too small to cook.

  2. Jacques Pepin again proves why he's the king. The stems are the best part. I shave off the buds, leaving as much stem as possible, then cut that into pieces for steaming. Makes a heck of a mess but worth it.

  5. Can you do a similar video, but with cauliflower? I want to know how to eliminate/minimize all of the tiny pieces that shave off while I cut it up. My knife skills are awful, so just….yeah.

  6. I actually really like the slightly charred tiny partial florets in roasted broccoli, so I'll actually intentionally cut it "wrong" when I do. Will definitely adopt the pull apart method with steamed broccoli though.

  7. Nit-picking, but what's the point of a plastic bag instead of just putting it in water (like cut flowers)?

  8. the health benefits of Broccoli are Destroyed with Heat! You do not want to roast if eating for any health benefits. You still get the fiber but phytonutrients destroyed. Sulforaphane tolerates about 5 minutes max of steaming. I know I love roasted vegetables too, but we destroy the health benefits of most vegetables at least the Cruciferous Vegetables where main health benefit is Sulforaphane which is anti-inflammatory and boosts immune system which is cause of many chronic illnesses etc. Just do a google search, you don't need to believe me🤣 Start eating raw in salads or find a healthy dip ( I am still trying various ideas)

  9. when ever i think of broccoli i think of "Chicken Divan" its my favorite use for all the goodies, chicken cheese and broccoli! Nomers! Mom used to make it and to this day i dont see or hear of anyone making it but me. very cherished old time recipe.
