Griddled Fajitas with a side of Street Corn

People are always asking me for easy, weeknight meal ideas. Cooking fajitas using marinated meat from local Mexican meat markets plus an easy side of street corn is one of the fastest, tastiest meals I can make my family. If you do not have access to a Mexican meat market you can create you own marinade.

We can never agree on beef or chicken, so we make both in this recipe. Specifically on the chicken, I prefer thighs because of the flavor ad juiciness. In this recipe we griddle the fajitas, which can also be achieved by cooking in a cast iron skillet. Alternatively you can also directly grill this recipe.

  2. I like the Flatrock, but can’t justify the price. I currently have an Egg and thinking about getting a SizzleQ to try some of what you’re doing. Recently bought some of your rubs: Gospel, Cow and Voodoo. It’s all good stuff. Appreciate the AARs! Forget the naysayers

  4. Again you have shown all of us that cooking inside sucks! I can’t wait to be able to get the flatrock up here in Canada! My traeger smoker is so well made that I could buy a black stone but I will wait for the flatrock.

No doubt the marinated meat is good, but many times you can ask them to make it "preparada" and they have a lime juice style marinate that is pretty bomb too, gotta cook within a few hours though from picking up. I make my own carne asada marinade w/ lime juice, orange juice, sliced onions, cilantro and a bit of worstershire sauce. Tenderizes the meat and comes out very tasty!

  7. I have a carniceria just down the street too. I can get the marinated pollo and carne still whole. I carve the strips after the cook instead of prior to cooking.

  9. I'd love to see a charcoal series. Some of us apartment dwellers only have access to a small charcoal grill.

  12. Can you please make ham burnt ends (maybe with a coke/brown sugar/mustard glaze) and for the side a loaded baked potatoe salad (potatoes/mayo/sour cream / cheese bacon/ green onions. So good cold but even better hot and would probably be over the top smoked! I don’t have a smoker yet lol

  14. How is the heat on the sides of the Griddle . Man you can't have anything within 10 in on the Blackstone with out it getting hot or melting . The guac + Pico ????

  15. A bit off topic but what makes me somewhat proud as a UK citizen, is that all you good barbecuing people seem to use the thermapen which is a small UK company based not far from where I live on the south coast. I got one with my Traeger (a great US product)!

  16. My wife is the same. So I mix thigh meat and breast meat together when making a chopped or shredded chicken recipe. Best of both worlds! She can't complain haha
