  1. Ingredients:

    210g white sugar
    100g prserved lemons
    1/2 lemon juice (50g)
    130g milk
    110g oil
    300g all purpose flour
    3 tsp baking powder
    Vanilla

    Icing:
    200g powdered sugar
    4-5 tbsp lemon juice
    Vanilla extract 

    To substitute preserved lemons use:
    Zest of 3 lemons
    100g lemon juice 
    140g milk
    1/2 tsp salt

    Method:

    1. Preheat the oven to 180°C and line a loaf tin with parchment paper.  

    2. For normal lemons, zest them into a large bowl, add the sugar, and rub together with your fingers to bring out the flavor. If using preserved lemons, remove the seeds, blend them, then mix with the sugar.  

    3. Stir in the lemon juice, milk, oil, and vanilla until combined.  

    4. Gently fold in the flour and baking powder until just mixed, don’t overwork the batter.  

    5. Pour into the prepared tin. For even rising, you can lightly trace a line with regular oil lengthwise down the center. Bake for 50 minutes or until a skewer comes out clean.  

    6. Let the cake cool in the tin for 5 minutes, then transfer to a rack for 20 minutes.  

    7. Mix the icing ingredients until smooth. Poke small holes all over the cake with a skewer.  

    8. Slowly pour (or use a spoon) about a 1/4 of the icing over the cake, letting it seep into the holes. Repeat until the holes are filled, then pour the rest for an even finish.
