Noticed that he didn’t really season the flour at all. Are you getting that seasoning and flavor in the chicken when you brine overnight?

I make burgers at home with fresh homemade English Muffins (pan top instead of oven) instead of a breadbun. Absolutely delish. Ruined takeout burgers for the family????

I live in Santa Fe and have been there numerous times. The food and the beer is beyond world class!!

Odd method to brine it and then sous vide. Could probably just sous vide the breast in a salt and garlic rub and achieve basically the same result. The only issue I have with brining is the loss of moisture inside the brined meat being replaced with tap water in the brine. So yes it stay moist, but it’s flavorless tap water. The advantage of sous vide is to, in theory at least, par (or fully) cook, marinade and intensify your dish in a single step that creates the uniformity texture you see when he cuts the breast in half after being fried. You’ll never see that in a meat that has not been either sous vide or brined. It’s almost like eliminating the grain of the muscle fibers so every bite is delightfully tender and moist.
So odd that I’m being suggested this considering I’ve actually been to Rowley. Can vouch that the beer and the food is great!
I love these videos, but… I hate they end so abruptly. It's like the editor just did a cut/paste and called it a day. No need to have a smooth transition.
The videos should end with the same lil' music jingle the show users when cutting to commercial.
