    I know you would eat caramel by the bucket if you really could.
    here is a bakery quality recipe

    175g sugar
    190g heavy cream
    50g butter
    3g salt
    38g corn syrup
    25g dark chocolate

    You would love Swedish Christmas candy called Knäck. It's just like your caramel but with some chopped almonds in it too. It's cooked a little longer so when you cool it, it stays in a button form.

    Be careful with hot sugar you will end up with serious burns that will need immediate medical attention

    For me, that is way way way too dark. It will taste burnt. I like a golden color. The salt is fine. But once you put in chocolate, it is no longer caramel.

    In my experience making caramel, a pinch of citric acid also works to keep the sugar from crystallizing.
