    🥚 Himachali Anda Madra (Mud Pot Style) – Ingredients (for 8 eggs)
    8 – Boiled eggs (peeled & Roasted)
    1½ cups – Thick curd (not sour)
    3 tbsp – Mr Gold Mustard Oil
    1 tsp – Mustard seeds
    1 tsp – Cumin seeds
    A pinch – Asafoetida (hing)
    2 tsp – Fennel seeds
    2 tsp – Ginger-garlic paste
    1 tsp – Turmeric powder
    2 tsp – Red chilli powder
    2 tbsp – Coriander powder
    1 tsp – Garam masala (or sambar powder)
    Salt – As needed
    Fresh coriander leaves – For garnish

    🔥 Instructions
    Heat a mud pot (or regular pan) on medium flame.
    Add oil, then temper with mustard, cumin, asafoetida, and fennel seeds.
    Add ginger-garlic paste and sauté until aromatic.
    Add turmeric, chilli powder, and coriander powder. Add a little water and sauté until the raw smell fades.
    Whisk the curd well and slowly add it to the masala mixture. Stir continuously on low flame to prevent curdling.
    Once the gravy thickens slightly, add the boiled eggs (whole or slit for more flavor).
    Add salt and garam masala, cover, and slow cook on a low flame for 5–10 minutes.
    Garnish with fresh coriander leaves and serve hot!
