Line Cook Tristan Kwong of Bonnie’s is responsible for sourcing, buying, and curating all of the fruit that makes its way onto their famous fruit plate. His knowledge of how to pick the best fruit, at its peak ripeness, has earned him the title Fruit Sommelier—and he’s here to share what he knows. 1. Instant like. This is the exact vid needed after we watched Tristan on BA’s “Day in the Life” series. ???????? Thank you so much, Bon Appétit!

  2. Can't believe dude never once used smell. Best way to choose strawberries is by smell.

  3. this is such a great educational video! one tip left out are dragon fruit seeds are natural laxatives. be careful ; )

  4. Wait… How can fruits get heavier when they ripen? Do they shrink? I don't understand!!

  5. My experience with watermelon is that most watermelons in the same shipment taste pretty similar. I'm still one of those "middle aged dudes patting the watermelons" – but never feel like it makes much of a difference. Great tips, though!

  6. I understand they aren’t in season, HOWEVER…No plum, peach, nectarine?

  7. The ataulfo mangos are so much better if you let it go longer than you think, they get wrinkly skin and feel very soft. It should be bright orange inside, not yellow!

  8. Welp, now I gotta see if I can find a pomelo, that looks fantastic.
My favorite way to eat oranges is to get the sections like that, and it looks even easier with pomelo.

  9. Citrus is very fragrant when ripe. I always smell the stem side, if no smell no buy!

Did I miss the grapes ????? They're on the plate.

  10. did he just say the centre part of the pineapple is inedible? 26 years it took me to learn that

  11. I feel like this guy would be able to tell if my wife is about to give birth just by touching her belly
