  1. Brisket can be cooked a bunch of different ways. You’ve got the easy “set it and forget it” smokers… and then you’ve got offset smokers, where you’re out there managing the fire the whole time.

    Most days, I’m all about keeping it simple and easy. I’m so busy I got to. Other days, I wanna kick back, throw on some music, vibe out with my sous chef Roxy, and manage fire while sippin on a few cold @millerlite ‘s

    This right here…this is my favorite kind of cook.

    Life gets hectic for all of us-work, family, kids, whatever it is. So being able to unplug, reset, and just get lost in my thoughts and the moment… that’s therapy for me. It’s what keeps me grounded, humble and sane.

  5. Ain't that the mf truth. I've always preferred this way just to be tending the fire. Good for the soul. I have yet to buy a pellet grill. I probably never will.

  6. Well, he’s not wrong. Been doing it that way for decades. Slow and low and a case of Lone Star. Comes out perfect every time.

  7. That's the right and only way to do it for me. I know people going to hate and say pellet grill, but I prefer log wood smoking for my meats.
