  1. I would say go with extra large eggs and you'll only need a dozen….Martha has those hens that lay small eggs

  2. Do egg yokes freeze well? Also. Ive heard room temp egg whites beat better with sugar

  3. I don’t know what I’m doing wrong. Every time I bake it, it starts to deflate at 30 minutes in the oven. Is it over baked?

  4. This was my favorite cake in my childhood. I have tried twice to make it. I was as careful as I can be at every step and everything seemed right until the last ten minutes of the bake; both times the cakes which had reached full height started to deflate while still in the oven—along with my deflating joy.
    Even after they were cooled upside down they continued to collapse. Can anyone tell me what I am doing wrong?
    I scrupulously cleaned all the containers and utensils, I was every careful to have no egg yolk in the whites, I have the same aluminum cake pan as in the video, and I was very gentle folding in the flour-sugar mixture. I love this cake and am determined to succeed but I can‘t bare to separate another fourteen eggs without some advice. Thank you in advance. ????????
