I heard your not supposed to use a tall pan because the rice could cook unevenly and is cooler on the top.

Portobello mushrooms?
I love risotto and I make it at least 2 or 3 times a month. This recipe is perfect but feel free to use any other meats or veggies you like. Don't overcook the risotto; the rice should still be a little bit firm at the center.
