Spaghetti carbonara is a favourite among Italian dishes – Chef Tutor Andrew Roberts from our Kings Cross Cookery School shows you how to make it.
A real classic, this rich flavoured pasta dish uses few ingredients and is on the table in a little over 30 minutes. The smooth sauce coats the spaghetti while the chunks of guanciale add a subtle saltiness – bacon or lardons work just as well.

1 clove garlic, crushed, with skin on (optional)
300g spaghetti
40g Parmigiano Reggiano, freshly grated
40g pecorino, freshly grated
2 British Blacktail Free Range Medium, beaten
