  2. Only thing I would do different is to make up a little extra sauce to drizzle over the finished product. That warm sauce spread on top of this dish would be sooooooo very nice.

  4. I do just that, but I call them Enchiritos because I include pinto beans (dried beans, pressure cooked in an instant pot), tex-mex cheese, and green chilis in the sauce. Then throw the shredded chicken in it in a big bowl, mix it all up and then spoon the mix into big burrito wraps and wrap all inside a 13" casserole dish, cover with sauce and cook it at 350 covered for about 30 minutes. Uncover it, coat it with shredded tex-mex cheese and put it back in the oven until the cheese melts. Try it, it is AWESOME!!!

  9. Perfect recipe, and easy. I also like to make chicken enchiladas with green sauce, canned mild whole green chilis, shreded pepper jack cheese and sliced black olives. Make a big batch, they freeze well, two or three to a ziploc bag.

This is so far from real enchiladas that I had to write. I know you'll either erase this or delete it but to keep you integrity as a chef and like I said,, I love your food ideas but maybe you should stay away from poor choices like this and do the things your great at.   11. Pro tip, use a pie dish and put some chicken broth into it and dip your tortillas in it, prevents them from breaking and tearing during assembly.
