INDULGENT Upside Down Millionaires Shortbread Brownie ???? | Cupcake Jemma

Jemma’s back with one of her all time FAVOURITE bakes – but with a twist! Welcome the Upside Down Millionaires Shortbread BROWNIE. Fudgey dark chocolate brownie with a layer of DELICIOUS salted caramel toffee, finished with a layer of dark chocolate ganache with a milk chocolate drizzle AND a shortbread round on top! This recipe is for an 8″ square tin.

BROWNIE
165g Dark 70% Chocolate
165g Butter
135g Plain Flour
45g Cocoa Powder
½ tsp Baking Powder
½ tsp Salt
3 Eggs
330g Caster Sugar
1 tsp Vanilla Extract

TOFFEE
150g Dark Muscovado Sugar
150g Butter
400g Double Cream
1 tsp Vanilla Extract
¼ tsp Salt

SHORTBREAD
75g Soft Butter
30g Caster Sugar
½ tsp Vanilla Extract
115g Plain Flour
½ tsp Salt

TOPPING
140g Dark Choc 50%
60g Butter
20g Golden Syrup
Pinch of Salt
20g Milk Chocolate

  3. Your brownie recipe is always my go-to, it’s so rich & of course, super fudgy when you leave it in the fridge a few hours (or over night)

  6. Can we just add some molasses to dark brown sugar and the butter? If so, how much?Just last week I checked 4 stores for that type of sugar. One of them being a store known to carry a lot of baking supplies yet still had no luck ☹ The millionaire shortbread recipe I make uses caramel. A tip given to to stop the chocolate from chipping while slicing is to warm your blade up. Just use hot water and wipe between ea cut. Yeah, it's a pain but it works. Love that recipe because the caramel doesn't ooze out when sliced but I'd really love to try a millionaire shortbread recipe that's using toffee vs caramel. Just need some advice on that question I asked earlier. Thanks Gemma… ????
