It's a matter of your taste. The ingredients for the most part are quite similar. But one thing I notice is that Nigerians use parboiled rice for Jollof. Or they will parboiled the rice and then add the stew to cook and then will smoke it to give it that smokey flavor. So the ingredients are basically the same the prep and the preferred choice of grain is different. Ghanaians don't use Parboiled Rice.

Jane i am from Trinidad & Tobago and this rice dish resembles our Pelau. We dont use tomatoes though or all those spices. We brown sugar as the base for flavouring the rice and chicken. Then we add pigeon peas, carrots, green seasonings, maggi seasoning, chopped garlic and coconut milk. We cover it and let it steam down. The rice is browned from the burnt sugar and it is delicious too.
