I like rocket and red veined sorrel. Sorrel is apparently even better in terms of nutrients and fibre. I have sorrel dotted all over my garden as an understorey plant – it grows well all year and looks pretty. Cut and come again. Cook them up in a bit of chili oil, some cherry tomatoes, and sometimes a fried egg on top. I could eat it every day 🙂

A not real spinach that i really love is the strawberry spinach. Its a northern north American.vegetable with leaves that work the same as spinach and taste similar too. It is just a bit more nutty in flavour. And it also grows little red fruits that taste similar to (red) beets! It's basically an entire salad in one plant xD
