  1. Dang, I got pretty excited for peyote kimchi before you said that last part.

  2. Legal lol why did my mind go immediately to magic mushroom kimchi. I don’t know if that’s a thing but if it were …

  3. It seems like it’s gonna have similar texture and taste to 깍두기, radish kimchi!!

  4. It's funny that you chose kohlrabi for this, because kohlrabi and cabbage are actually just different varietals of the same plant. Brassica oleracea is the all star of the vegetable section. Cabbage, broccoli, cauliflower, kale, mustard greens, kohlrabi, and others are all just varietals of Brassica oleracea

  5. sobs WHERE CAN YOU GET KOHLRABI IN TBE STATES! I made a kohlrabi soup once and I want to make it again so badly…but I can't find it anywhere. sobs

  6. Actually, nothing in kimchis definition prevents it from being made from inedible or legal things.

  7. Kohlrabi kimchi is as good as raddish kimchi. They are both great ingredients to be pickled too. Yum!

  8. "so long as it's legal"… well now I am definitely fermenting my kimchi with certain fungi.
