Lemon zest butter would have been nice with lemon juice for that acid you were missing. At a much cheaper cost too. Looks great!
Dude that lemon peppa! Lemon pepper wings are my go-to. I also employ the lemon pepper butter at the end, but also add a squeeze of lemon juice in the butter AND since we're going all in on lemon serve with lemon slices on the side.
Last time around I used the 0-400 method on them after dry brine with salt+bp. Some super crispy lemon peppery wingy dingys

I can confirm Lemon Pepper wet is the single best wing flavor…..
You can just buy dry lemon peel online too. I've purchased dry orange peel for a liqueur. That could be a better option to still make it your own vs a store bought rub.
I would totally buy that rub from you dude!!
