Jamie – I would love for m you to try two things. First: Soft smoked (cold smoked) Chinook Salmon – smoke with Beech wood. I think you would really like that. Second: Really good Candied Salmon – specifically Pike Place Market candied salmon. OMG. Also, it would be great for you guys to try all of the species of salmon – most especially Chum/Keta , Chinook, Sockeye, Coho, and relatives – Steelhead, Arctic Char, Dolly Varden, Rainbow Trout (wild), etc…. And different types of smoked salmonids. Hickory, Beech, Apple, Cherry, Walnut, Mesquite and others. Hard smoke versus slow cold smoke, different brines and ….

In general I like Sidekick, great results so far. Although it feels like the recipes are more for UK people – it is quite difficult to get some of the ingredients like fresh coriander, chorizo and naan bread here in Austria.

One thing about Sidekick which has bothered me a bit is the restriction to full weeks. If you could have some way to 'wrap' a meal pack across weeks that would be great!
