Make Ahead Jerk Chicken

Make-Ahead Monday: Jerk Chicken and Rice Meal Prep

I love the spicy-sweet combo of this meal!

You will need:

1 lb  boneless, skinless chicken thighs 
2 TB Walkerswood Jerk seasoning (they sell a hot and spicy or mild version)
Zatarains Carribean rice
Chopped onion and pineapple for garnish

Prepare rice according to package directions. Place your chicken in a bowl and top with 2 TB of Jerk seasoning for every pound of meat. Resist the temptation to add more; it will get darker after cooking. Broil chicken pieces on a foil-lined baking pan for 6 minutes per side. Allow the meat to rest, and then slice and serve it atop prepared rice. Garnish with pineapple and onion, if using.

  4. About a year ago we tried that brand of jerk sauce, It tasted so awful we threw it out

  5. Walkerswood is a staple in my fridge! It's great on most proteins, even tofu

  8. That Zatarains Caribbean rice has been a favorite in our family for like 20 years. We just add some chicken and extra pineapple for an amazing simple dinner.
