  2. This video fits exactly with my interests: cooking 'proper' italian food (lol just watch Vincenzo arguing with his mate on his channel about how to cook Bolognese), and anything Marion makes.

  10. I’m sorry – but lasagna is made with fresh pasta sheets, bechamel sauce and grated Parmigiano-Reggiano. No ricotta. This is how Italian housewives have been making it forever, and how I learnt to cook it in Rome. As much as I love Asian food, traditional recipes should stay traditional.

  11. Normally I wouldn’t trust one-pot pasta recipes, like Martha Stewart’s. They tend to work only if you’re cooking for 4, which means if you’re cooking for less there’s a risk of ingredients getting overcooked / undercooked / waterlogged. This one, though, I might try. I like the multiplier effect of adding umami stuff, the fact that she uses a pasta not requiring a big surface area, and that the sauce is already made prior to adding a pasta to both cook and thicken the resulting dish. I might try this one.
    I also have to give props to Vincenzo here. Normally he overextols “traditional” Italian recipes and techniques, slamming others for not doing things the “right” way, aka his way. Here, at least, he doesn’t seriously try to stop Marion from doing things her way, and is willing to concede she made a good dish. Hopefully this might mean he’ll at least do his research and listen to other YT foodies when it comes to cooking with non-Italian ingredients and techniques.

  12. ???????? Well I wasn't expecting that… So much fun! I seem to recall some ancient Roman recipes for lasagna are made a little like this. Lasagna is much older than the modern Bolognese version.
