Nellore Chicken Biryani
Oil 2 tbsp (30 ml) Ghee 2 tbsp (30 ml) Bay Leaf 2 nos Star Anise 2 nos Cloves 5 nos Nutmeg ½ piece Mace 2 nos Green Cardamom 5 nos Cinnamon 4 inch Onion (sliced) 5 nos (300 g) Salt 1 tsp (3 g) + 1 tsp (3 g) + 1 tsp (3 g) Ginger Garlic Paste 3 tbsp (60 g) Green Chilli 6 nos Tomato 4 nos Pineapple (diced) ¼ Cup Chicken (biryani cut) 1 kg Red Chilli Powder 1 tbsp (12 g) Coriander Powder 2 tsp (6 g) Cumin Powder 1 tsp (6 g) Turmeric Powder 1 tsp (6 g)` Curd (beaten) 1 ½ Cup (350 g) Mint Leaves ½ Cup (5 g) Coriander Leaves ½ Cup (5 g) Lemon Juice 1 tbsp (12 ml) Water 3 Cups (750 ml) Rice 2 Cups (500 g)
Instructions:
Add the oil and ghee to a large pot. Add the whole spices and toast until fragrant, around 1 minutes on a medium heat. Then add the onion and green chillies, along with salt. Saute for 10 – 12 minutes on a medium high heat, or until golden brown and soft. Add the ginger garlic paste and cook until the raw smell goes. Add the tomato and mix to combine well. Cook for 5 minutes. Add the red chilli powder, turmeric powder, coriander powder and cumin powder. Mix well. Once the onions start to stick to the pot, add the chicken and stir. Add the beaten curd and mix immediately. Cook for 10 minutes or until the oil separates. Add the mint and coriander leaves and pineapple and saute for 2 minutes. Add water and bring to a boil. Add the rice and stir until the water and rice level match. Close tightly and cook on dum for 15 minutes. Let the biryani rest for 15 minutes before opening and adding ghee. Serve hot!
