Corn relish recipe

10 cups fresh corn
4 cups diced bell pepper,
2 cups diced celery
1 cup diced onion
2 cups sugar
5 cups white vinegar
2 1/2 T. canning salt
2 1/2 t. celery seed
or dill seed
2 1/2 T. dry mustard powder
1 1/4 t. turmeric

pints and 1/2 pints

process 20 minutes

  2. Hello Miss Lori! I have been watching you for about a year now and always envied how you made canning look so easy. I always wanted to try it but always talked myself out of it for fear of doing something wrong. This summer I finally got the courage and tried water bath canning and made some fruit jams! It worked and my family loved them. If it wasn’t for you and your encouragement and being able to watch step by step videos I would have never tried it so thank you so much. I love corn so I think I am going to try this recipe. Wish me luck!

  4. My mom made this from sweet corn from our garden in the forties and fifties. It was so good you wanted to eat it with a spoon. This sounds like the recipe she used. Great condiment! Thanks for the memories! I will make this in my Instant pot max canner.Blessings!

  5. If I would use frozen corn, celery and onions, would I let all those thaw first ?

  6. My dad loved corn relish. I would eat it on a cracker with peanut butter. I never understood how he could eat the two together!
